Abstract:

İnsanın hayatını devam ettirebilmesi için gerekli olan gıda her zaman önemli olmuştur. Neolotik dönemle başlayan tarımsal üretim günümüze kadar önemini korumuş olup gelecekte de bu önem devam edecektir. Ekonomisi tarıma dayalı olan Osmanlı Devleti, tarımsal üretimden topladığı vergileri öşür vergisi adı altında farklı dönemlere ait olarak Tahrir ve Temettuat defterleri gibi sayımlar aracılığıyla kayıt altına almıştır. Bu sayım defterleri arasında yer alan ve 1839-1840, 1844-1845 yıllarında tutulan Temettuat defterleri, Osmanlı Devleti’nin tarımsal faaliyetleriyle ilgili olarak ürün çeşitliliği ve miktarları hakkında fikir sahibi olunmasını mümkün kılmaktadır. Eldeki çalışmada da Temettuat defterlerinin kaynak olarak kullanıldığı lisansüstü tezler temel alınarak XIX. yüzyıl Anadolu’sunda yer alan tarımsal ürün çeşitliğini ve tarımsal ürün desenini ortaya çıkarmak hedeflenmiştir. Kırk farklı sahaya ait tezlerin incelenmesiyle XIX. yüzyılda Anadolu’da ziraatı yapılan tarım ürünlerinin içerisinde hububat, meyve ve sebze üretiminin önemli bir yeri olduğu anlaşılmıştır. Hububat üretiminde buğday ve arpa başı çekerken meyve üretiminde üzüm ve dut, sebze de ise soğan öne çıkmaktadır. Bu dönemde darı, fındık, erik, zeytin, susam, burçak, vişne, badem, börülce, kestane, ceviz, elma gibi ürünlerin de ziraatı yapıldığı görülmektedir. Genel olarak bakıldığında Anadolu’da ağırlıklı olarak hububat tarımı yapıldığı, bunun yanı sıra meyve ve sebze üretiminin ise kıyı bölgelere doğru çeşitlendiği tespit edilmiştir. Ayrıca XIX. yüzyıl Anadolu’sunun farklı bölgelerinde afyon, tütün, kök boya, pamuk gibi endüstri ürünlerinin de yetiştirildiği sonucuna ulaşılmıştır.
