İnek Sütü Üretiminde Maliyet Analizi: İzmir’in Foça İlçesi Örneği

Abstract:

Amaç: Bu araştırmanın amacı, İzmir’in Foça ilçesinde faaliyet gösteren süt sığırcılığı işletmelerinde inek sütü maliyetini analiz etmektir. Materyal ve Yöntem: Araştırmada beş ve daha fazla sağmal hayvana sahip işletmelerin kapsama alınmasına karar verilmiştir. Bu amaçla İzmir Damızlık Sığır Yetiştiricileri Birliğine kayıtlı 80 işletmeden anket yöntemiyle veriler derlenmiştir. Verilerin analizinde sağmal hayvan sayısına göre işletmeler üç grupta toplanmıştır. Birinci grup işletmeler 9 baş ve daha az (37 işletme), ikinci grup işletmeler 10-19 baş (19 işletme), üçüncü grup işletmeler ise 20 baş ve daha fazla hayvana sahiptir (24 işletme). Öncelikle işletmelerin sosyo-ekonomik özellikleri ortaya konulmuştur. Daha sonra süt sığırcılığı üretim dalı bağımsız olarak incelenmiştir. Süt maliyeti birleşik maliyet hesaplama yöntemine göre hesaplanmıştır. Bulgular: Araştırma sonuçlarına göre, işletmelerde ortalama sağım süresi 268.41 gün, hayvan başına günlük süt verimi ise 23.09 kg’dır. İşletmelerde üretilen sütün %91.68’i pazarlanmaktadır. Üretici eline geçen ortalama süt fiyatı 1.24 TL/kg olarak hesaplanmıştır. İşletmelerde yem masrafları toplam üretim masraflarının %72.82’sini oluşturmaktadır. Ortalama birim süt maliyeti 1.19 TL/kg olarak saptanmıştır. Sonuç: Süt sığırcılığı üretim faaliyetinin özellikle büyük işletmelerde daha karlı yapılabildiği sonucuna ulaşılmaktadır. Dolayısıyla işletmelerin büyümesini özendirici politika tedbirlerinin alınması gerekmektedir. Ancak sosyal açıdan değerlendirildiğinde küçük işletmelerin de yaşaması gerekmektedir. Bu nedenle küçük işletmelerde karlılığın yükseltilmesine yönelik çalışmaların  yapılmasında da yarar vardır.

Purpose: The purpose of this research is to analyze the cost of cow’s milk in the milk livestock enterprises operating in the Foça district of İzmir. Materials and Methods: The study determined the coverage of with five or more pet animals. For this purpose, the data were collected by the survey method of 80 enterprises registered in the İzmir Damızlık Beef Farmers Association. In the analysis of the data, according to the number of livestock animals, the were gathered into three groups. The first group of has 9 head and less (37 enterprises), the second group of has 10-19 head (19 enterprises), and the third group of has 20 head and more animals (24 enterprises). First of all, the socio-economic characteristics of the enterprises are revealed. The production sector of dairy livestock was then independently examined. The cost of milk is calculated according to the combined cost calculation method. Results: According to the research results, the average delivery time in is 268.41 days, while the daily milk production per animal is 23.09 kg. 91.68% of the milk produced in is marketed. The average price of milk in the manufacturer's hand is estimated at 1.24 TL/kg. In, food costs account for 72.82 percent of the total production costs. The average unit cost of milk is 1.19 TL/kg. The result: the result is that the production activity of dairy livestock can be made more profitable, especially in large. Therefore, it is necessary to take policy measures to promote the growth of. But when it is socially assessed, small must also live. Therefore, it is also beneficial to work on improving profitability in small.

Material and Methods: In the research, it was decided to include farms with five or more milking animals. For this purpose, data were collected by questionnaire method from 80 farms  registered to Izmir Cattle Breeders Association. In the analysis of the data, the farms are classified into three groups according to the number of milking animals. The first group of farms has 9 heads and fewer (37 farms), the second group of farms has 10-19 heads (19 farms), and the third group of farms has 20 heads and more animals (24 farms). Firstly, socio-economic characteristics of farms have been put forward. Then, dairy cattle production branch was examined independently. Milk cost was calculated according to the combined cost calculation method. Results: According to the results of the research, the average milking period is 268.41 days and the daily milk yield per animal is 23.09 kg. 91.68% of the milk produced in the farms is marketed. The average milk price received by the farmers is calculated as 1.24 TL/kg. Feed costs in the farms constitute 72.82% of the total production costs. The average unit milk cost was determined as 1.19 TL/kg. Conclusion: It is concluded that dairy cattle production activities can be done more profitably, especially in large farms. Therefore, policy measures should be taken to encourage the growth of farms. However, when evaluated socially, small farms should also live. For this reason, it is also beneficial to carry out studies to increase the profitability in small farms.
