Gastronomi Turizmi Potansiyelinin Tespiti ve Geliştirilmesi Kapsamında Balıkesir’in Değerlendirilmesi

Yemek insanların en temel fizyolojik ihtiyaçlarından birisidir. Yemek yemek günümüzde farklı mutfak kültürlerini tanımak, farklı lezzetleri tatmak, yeni deneyimler yaşamak gibi nedenlerle insanların seyahat etme motivasyonlarından biri haline gelmiş ve bununla birlikte gastronomi turizmi kavramı ortaya çıkmıştır. Gastronomi turizmi ekonomik kalkınmada, doğal ve kültürel zenginliklerin yaşatılmasında, turizm faaliyetlerinin yılın her ayına yayılmasında önemli bir araç olduğu düşünülmektedir. Bu çalışmada Balıkesir ilinin gastronomi turizmi açısından çekicilik unsuru oluşturan yöresel ürünlerin tespit edilmesi, bu ürünlerin gastronomi turizmi çerçevesinde kullanılabilirliğinin tartışılarak çıkarımlar yapılması ve öneriler geliştirilmesi amaçlanmıştır. Literatür taramasına dayanan çalışmanın sonucunda Balıkesir yöresinin geçmişten bu yana çok farklı kültürleri barındırmış olmasından kaynaklı zenginliğinin mutfak çeşitliliğine de yansıdığı görülmektedir. Toplam 11 adet coğrafi işaretli ürünü bulunan Balıkesir’in gastronomi turizmi açısından değerli kılan pek çok zenginliği bulunmaktadır. Son olarak “50 Peynirli Şehir Balıkesir” eseri 2019 yılı dünya yemek kitabı yarışmasında birincilik ödülü alması şehrin sahip olduğu gastronomi değerlerinin ortaya çıkmasında önemli bir adım olmuştur.

Food is one of the basic physiological needs of humans. Eating today has become one of the motivations for people to travel for reasons such as knowing different cuisine cultures, taste different tastes, experience new experiences, and the concept of gastronomic tourism has emerged. Gastronomy tourism is considered to be an important tool in economic development, in the preservation of natural and cultural wealth, in the spread of tourism activities every month of the year. In this study, the objective is to identify local products that make up a attractive element in the gastronomic tourism of the Fisheries Province, to discuss the availability of these products in the gastronomic tourism framework and to make outcomes and develop recommendations. The study based on literature scan results in the fact that the fisheries region has since hosted many different cultures and its wealth is reflected in the cuisine diversity. There are many wealth that make the Fishesir valuable in terms of gastronomic tourism, with a total of 11 geographical-marked products. Finally, the award of the first prize in the 2019 World Food Book Competition of the work "50 Cheese City Fish" has been an important step in the publication of the gastronomic values the city possesses.

Eating has become one of the motivations of people to travel due to reasons such as getting to know different culinary cultures, tasting different tastes and having new experiences, and the concept of gastronomy tourism has emerged. Gastronomy tourism is thought to be an important tool in economic development, keeping natural and cultural riches and spreading tourism activities every month of the year. In this study; it is aimed to identify local products that form an attraction for the gastronomy tourism of Balıkesir province, to make inferences and develop suggestions by discussing the usability of these products within the framework of gastronomic tourism. As a result of the study based on the literature review, it is seen that the richness of Balıkesir region has been reflected in the culinary variety due to the fact that it has hosted many different cultures since the past. Balıkesir, which has a total of 11 geographically marked products, has many riches that make it valuable in terms of gastronomy tourism. Lastly, "The City with 50 Cheese Balıkesir" received the first prize in the world cookbook contest of 2019 was an important step in the emergence of the city's gastronomic values.
