Bir bölgede eğitim gören üniversite öğrencilerinin geleceğin potansiyel turisti olmasından dolayı sokak yemekleri tercihleri ve hijyen algıları oldukça önemlidir. Bu çalışmanın amacı da öğrencilerin sokak yemekleri tercihlerini ve hijyen algılarını çiğ köfte özelinde incelemektir. Bu kapsamda Sokak Yemekleri Tercihleri ve Hijyen Algıları ölçekleri ile katılımcıların tanımlayıcı bilgilerini içeren bir anket Adıyaman Üniversitesi öğrencilerine Kasım ve Aralık 2020 tarihlerinde dağıtılmış ve 328 geçerli anket elde edilmiştir. Veri analizi neticesinde katılımcıların çiğ köfte tercihleri kolaylık, sosyalleşme ve hedonizm, kalite ve konum olmak üzere dört faktörde incelenmiştir. Katılımcıların çiğ köfte tercihinde etkili olan faktörler arasında kalite ve kolaylık faktörlerinin önemli olduğu saptanmıştır. Kalitenin belirleyicilerinden olan temizlik ve lezzet ise katılımcıların en önem verdikleri konular olarak belirlenmiştir. Katılımcıların çiğ köfte satıcılarına yönelik hijyen algıları ortalamalarının oldukça düşük olduğu saptanmıştır. Bu sonuçlar doğrultusunda çiğ köfte satıcılarının hijyen eğitimine önem vermelerinin gerektiği söylenebilir.
Street food preferences and hygiene perceptions are significant because students are expected to be potential tourists in the future. The study aims to examine the students’ street food preferences and hygiene perceptions in terms of “raw meatballs” - (çiğ köfte). In this context, a questionnaire containing the Street Food Preferences and Hygiene Perceptions scales together with the descriptors of the participants was distributed to Adıyaman University students in November and December 2020, and 328 valid questionnaires were obtained. As a result of the data analysis, the participants’ raw meatball preferences have been examined in four factors: convenience, socialization and hedonism, quality and location. It has been determined that quality and convenience factors are important among the factors affecting the participants’ choice of “raw meatball.” Cleanliness and taste, which are the determinants of quality, were determined as the most important issues by the participants. It was determined that the average hygiene perceptions of the participants towards the sellers of “raw meatball” have been relatively low. The sellers of “raw meatballs” should pay attention to hygiene education.
