Abstract In addition to being an important city in terms of gastronomy, tourism and culture, the fact that the academic studies are not sufficiently addressed reveals that it is necessary to focus on these issues. The aim of the study is to interpret the known tastes of the Bitlis region in a modern, simple and stylish way without departing from the traditional and our roots, while respecting our heritage and the products offered by nature. Such a study gives importance to the current potential of Bitlis and allows the products to be promoted throughout the country. At this point, the work carried out in terms of revealing the products suitable for the era and transferring them to the next generations by transforming the traditional contents of the forgotten or undiscovered products of the region into modern forms shows the importance. The findings are modernized studies prepared by adhering to the original recipes of Şor Balıklı Pilav, Glorik, Ciğer Taplemesi, Ayran Aşı, İçli Köfte and Cevizli Fetir. The research, which was conducted with the permission of the Ethics Committee, was carried out with the help of 6 female participants with the structured interview technique. The data of the study were collected between 15-25 April 2022. As a result; in the fast developing and growing gastronomy sector, innovation movements are becoming a necessity in order to maintain the traditional culture.
