Abstract:

Bu çalışmada Trakya bölgesinde üretilen çiğ sütlerin gıda güvenliğine ilişkin standartlara uygun biçimde üretilip üretilmediğinin ölçütü olan tank sütü somatik hücre sayısının belirlenmesi amaçlanmış olup, ayrıca sütlerin kimyasal ve mikrobiyolojik özellikleri de incelenmiştir. Bu amaçla; Edirne ilinden 18, Tekirdağ ilinden 10 ve Kırklareli ilinden 8 adet olmak üzere süt toplama tanklarından toplam 36 çiğ süt örneği alınmıştır. Çiğ süt örneklerinin yağ, yağsız kuru madde (YKM), protein, tank sütü somatik hücre sayısı (TSSHS) ve toplam bakteri sayıları (TBS); Edirne, Tekirdağ ve Kırklareli için sırasıyla %3.70, 3.60, 3.76; % 8.34, 8.50, 8.39; % 3.05, 3.09, 3.05; 308.555 26.510 (LogTSSHS 5.459 0.04 ad./ml), 350.200 53.627 (LogTSSHS 5.500 0.06 ad./ml), 254.500 37.645 SHS/ml (LogTSSHS 5.370 0.06 ad./ml); 479.481 1.777 (LogTBS 5.630 0.05 cfu/ml), 435.716 91.194 (LogTBS 5.523 0.12 cfu/ml), 446.958 81.515 ad/ml (LogTBS 5.602 0.08 cfu/ml) olarak bulunmuştur. Abstract:

This study aimed at determining the number of somatic cells of tank milk, which is the measure of whether raw milk produced in the region of Trakya is produced in accordance with the standards of food safety, and also examined the chemical and microbiological properties of milk. For this purpose, a total of 36 raw milk samples were taken from the milk collection tanks, including 18 from the province of Edirne, 10 from the province of Tekirdağ and 8 from the province of Kırklareli.
