Abstract:

Tirşik is a healing soup made in the winter months in the upper Çukurova region - commonly in Adana, Osmaniye, Maraş (especially Andrin). The raw material of this soup is a poison in the place known as the "sweat puppy". According to the local people, thyroid, flu, colds are mainly healed for stomach and intestinal diseases, even cancer. This is why the other name of the thyroid is "The Doctor of the End". But to be heal, it is necessary to be gathered in the right time, cooked properly and consumed properly. It also lives in the folklore of Çukurova, not just as a food, but in a multi-layered cultural structure. The purpose of this study is to explore all aspects of the folklore from the past to the present. In the study, it was studied as the gastronomic heritage of Çukurova, along with the concrete and non- concrete cultural heritage it created around it. In this context, the topics of food, cultural identity and gastronomic heritage are discussed in a comprehensive perspective over the curriculum in connection with the folklore. In the study, the information used was enhanced by photos, obtained by the method of collection from the source persons. For resolutions, it was used by written sources on the subject.
