Abstract:

Günümüz Türk toplumunda geleneksel Türk mutfağına duyulan merak ve ilgi gitgide artmaktadır. Bunda kitle iletişim araçları yardımıyla yayınlanan ve genellikle Osmanlı sarayını konu edinen dönem dizilerinin, geleneksel yiyecek-içecek tariflerini veren kitapların yoğun ilgi görmesinin ve Tarih bilimine olan ilginin etkisi vardır. Ancak bütün bunlara rağmen geleneksel Türk mutfağının günümüz Türk toplumu üzerinde ne denli bir iz bıraktığı bilinmemektedir. Bu araştırmanın amacı, geleneksel Türk mutfağının tarihsel gelişimini incelemek ve geleneksel Türk mutfağının günümüz yeme-içme alışkanlıklarının içinde ne ölçüde yaşatıldığını ortaya çıkarmaktır. Bu amaca ulaşmak için araştırma yöntemi alanyazım taraması olarak belirlenmiştir. Araştırmanın genel sonucu ise geleneksel Türk mutfağının günümüz Türk yeme-içme alışkanlıklarında giderek daha az yer kapladığıdır.

Abstract:

The interest and curiosity for traditional Turkish cuisine in today’s Turkish society is increasing. It has the impact of the period series published with the help of mass media and often covering the Ottoman Palace, the intensive interest of books that give traditional food and beverage recipes and the interest in history science. However, it is unknown how much traditional Turkish cuisine has left a footprint on today’s Turkish society. The aim of this study is to study the historic development of traditional Turkish cuisine and to reveal how much traditional Turkish cuisine is lived in today’s eating and drinking habits. The research method for achieving this goal is defined as an area scan. The general result of the study is that traditional Turkish cuisine is becoming less and less available in today’s Turkish eating and drinking habits.
