İzmir’in Kentsel Kesiminde Sera Sebzeleri Tüketiminin Analizi

Abstract:

Bu araştırmanın amacı; İzmir’in Konak, Karşıyaka ve Bornova ilçelerinde taze (yaş) sera sebzesi tüketimine yönelik hane halkı yapısını, tüketim eğilimlerini ve tercihlerini analiz etmektir. Bu amaçla oransal örnek hacmi formülünden yararlanarak Karşıyaka, Konak ve Bornova ilçe merkezlerinde yaşayan 139 hane halkı üyesinden anket yöntemiyle veriler derlenmiştir. Toplanan verilerin analizinde, öncelikle hane halklarının demografik ve sosyo-ekonomik özellikleri ortaya konulmuş, daha sonra sera sebzeleri satın alma ve tüketim davranışları analiz edilmiştir. Hane halklarının sera sebzeleri satın alma ve tüketiminde önem verdikleri faktörlerin, gelecek eğilim ve beklentilerinin değerlendirilmesinde beşli likert ölçeği kullanılmıştır. Hane halklarının sera sebzeleri tüketimini etkileyen sosyo-ekonomik faktörlerin analizinde lojistik regresyon (logit) modelleri oluşturulmuştur. Araştırma sonuçlarına göre, görüşülen hane halkı üyelerinin %67.63’ü kadın, %32.37’si ise erkektir. Hane halklarının ortalama aylık geliri 4554.32 TL olarak hesaplanmıştır. Hane halkı üyelerinin %49.64’ünün sera sebzeleri konusunda bilgili veya çok bilgili olduğu belirlenmiştir. %31.65’i az bilgili olduğunu belirtmiştir. Hane halklarının %71.22’si sera sebzesi tüketmektedir. Hane halklarının sera sebzesi tüketiminde dikkate aldıkları en önemli kriter tazeliktir. Bunu sırasıyla hijyen, tat ve lezzet izlemektedir. Hane halklarının sera sebzesi tüketme olasılığını bireyin çalışıyor olması, ailesindeki birey sayısı ve hane halkının geliri pozitif yönde etkilemektedir.

The purpose of this research is to analyze the household population structure, consumption trends and preferences for the consumption of fresh (old) greenhouse vegetables in the districts of Konak, Karşıyaka and Bornova of İzmir. For this purpose, data from 139 households living in Karşıyaka, Konak and Bornova district centers were collected using the survey method. In the analysis of the data collected, first demonstrated the demographic and socio-economic characteristics of households, then analyzed the behavior of the purchase and consumption of greenhouse vegetables. In the assessment of the factors, future trends and expectations of household people consider buying and consuming greenhouse vegetables, a five-dimensional liquid scale has been used. In the analysis of socio-economic factors affecting the consumption of greenhouse vegetables of households, logistic regression (logit) models have been created. According to the study, 67.63 percent of the household members surveyed are women and 32.37 percent are men. The average monthly income of the households is 4554.32 TL. 49.64% of household members were known or very well-known about greenhouse vegetables. 31.65% said they were less informed. 71.22% of the households consume greenhouse vegetables. The most important criterion that households take into account in greenhouse vegetables consumption is freshness. This is followed by hygiene, taste and taste. The possibility of households to consume greenhouse vegetables is that the individual is working, the number of individuals in the family and the income of the household people are positively affected.

For this purpose, data have been evaluated by survey method from 139 household members which live in Karsiyaka, Konak and Bornova district. In data analysis, firstly the demographic and socio-economic characteristics of the households have been determined, and then the purchase and consumption behaviors of their for greenhouse vegetables have been analyzed. The important factors for purchasing and consumption of greenhouse vegetables and future trends and expectations of households have been assessed from the Likert scale. Logistic regression (logit) models were formed in the analysis of socio-economic factors affecting greenhouse vegetables consumption of household. According to the results, 67.63% of household members were female and 32.37% were male. The average monthly income of households was calculated as 4554.32 TL. It was determined that 49.64% of the household members were knowledgeable or very knowledgeable and 31.65% determined as less knowledgeable about greenhouse vegetables. The most important criteria that households take into account the consumption of greenhouse vegetables is freshness. This has been followed by hygiene, taste and flavor. The possibility of households consume greenhouse vegetables positively affects the number of individuals in the family and the household income.
