Bir topluluğa ait yeme ve içme alışkanlıkları, o topluluğun kültürünün bir parçasıdır. Türk mutfak kültürünü şekillendiren önemli etkenlerin başında, bulunulan coğrafi bölgeler ve bu bölgelerde yaşayan toplulukların kültürleri gelmektedir. Bu bağlamda, tarihsel süreç içerisinde gerçekleşen göçler, bir coğrafyadaki mutfak kültürünün zenginleşmesi açısından önem kazanmaktadır. Bu çalışmanın amacı, 1923 yılı sonrası Selanik’ten Türkiye’ye gelen ve Çatalca’ya yerleştirilen Selanik mübadillerinin yeme-içme alışkanlıklarını ortaya çıkartmak ve aynı zamanda Türk mutfağına katkılarını belirlemektir. Bu amaçla, Çatalca’nın Elbasan Mahallesi’nde bir çalışma gerçekleştirilmiştir. Çalışmada verilerin elde edilmesinde yarı yapılandırılmış görüşme tekniğinden yararlanılmıştır. Çalışma sonucunda, mübadillerin geçmişten bu güne yeme-içme kültürlerini devam ettirdikleri ve kendilerine özgü yemek düzeni ve yemeklere sahip oldukları belirlenmiştir. Çalışmanın ilgili literatüre göçmen ve özelinde Selanik mübadillerinin mutfak kültürünü anlamak açısından katkı sağlayacağı düşünülmektedir.
The eating and drinking habits of a community are part of the culture of that community. The main factors that shape the Turkish cuisine culture are the geographical areas found and the cultures of the communities living in these areas. In this context, the migrations that occur within the historical process gain importance in terms of the enrichment of the cuisine culture in a geography. The aim of this study is to reveal the eating and drinking habits of the Thessalonians who came from Thessalonian to Turkey after 1923 and were placed in Çatalca and also to determine their contribution to the Turkish cuisine. For this purpose, a work was carried out in the Elbasan district of Çatalca. In the study, it was used a semi-configured interview technique to obtain data. As a result of the study, it has been determined that the exchangers have continued their food and drinking cultures from the past to the present and have their own food arrangements and meals. It is believed that the study will contribute to the related literature in terms of the understanding of the cuisine culture of the immigrants and the Thessalonian exchanges in particular.

The purpose of this study is to reveal immigrants’ who emigrate from Thessaloniki to Turkey after 1923 and settled in Çatalca district eating and drinking habits and also to determine their contribution of Turkish cuisine. To this end, a study conducted in Elbasan district in Çatalca. In the study, data were obtained by using semi-structured interview technique. As a result of the study, it was determined that the immigrants continue their food and drink cultures from the past and have their own meal plan and foods. It is believed that the research will contribute to the understanding of the culinary culture of immigrants and in particular Thessaloniki immigrants to the relevant literature.
