Abstract:

With this study, the 5-star accommodation companies located in the destination of Marmaris are trying to identify the conditions of external resource use of the kitchen departments. However, the study tried to provide information on how external resource use was carried out in the kitchen departments, how the process was started, in which sections or in which product groups external resource use was carried out. The information provided, the scan of the area and the accommodation enterprises are supported by conversations with the kitchen managers. Interviews were made face-to-face with the kitchen managers of the 5 star accommodation companies operating in Marmaris and findings were obtained. The research results showed that there was no use of external resources in the kitchen departments on the basis of the section. It dominates the use of an external source on the basis of the product. In general, there is no problem with the use of external resources. According to the results of the research, a number of recommendations have been made.
