Küyerelleşen dünyada ekonomik ilişkiler, teknolojik gelişmeler, yönetilen tüketim algısı insanlar ve toplumlar üzerinde karakteristik bazı değişimlere yol açmaktadır. Bu değişimler arasında mutfak kültürlerindeki değişiklikler de oldukça önemli bir yer tutmaktadır. Kültürün en belirgin ifade araçlarından biri olan mutfak kültürünün de günümüzde diğer birçok kültürel faaliyet alanında olduğu gibi modernizm sonrası dönem ve bu dönemin getirilerinden etkilendiği görülmektedir. Binlerce yıllık mutfak kültürü birikiminin temel karakteristik özelliklerine bile derinlemesine nüfuz eden postmodernizm, modernizm kadar kökten ve radikal bir dönüşüm ile kendisini göstermemektedir. Bu çalışmada modernizme oranla daha ılımlı, sert bir reddedişten uzak, inanca saygılı ve mesafeli bir genel görüşün temsilcisi konumunda olan postmodernizmin Türk mutfağındaki yansımaları irdelenmiştir. Bu bağlamda postmodernizm ekseninde Türk mutfağındaki sosyo-kültürel, dinsel ve teknolojik değişimler gastronomik bir bakış açısı ile ortaya konulmaya çalışılmıştır.

Abstract:

Economic relationships, technological developments, managed consumption perception in the emerging world lead to some changes characteristic of people and societies. Among these changes, the changes in the culture of the kitchen also hold a very important place. The culture of the kitchen, which is one of the cultural means of expression, seems to be influenced by the postmodernism period and the returns of this period, as well as in many other cultural activities today. Postmodernism, which has profoundly penetrated even the fundamental characteristics of thousands of years of culinary culture accumulation, does not manifest itself with a radical transformation as root as modernism. In this study, the reflections of postmodernism in the Turkish cuisine, which is a representative of a moderate, strongly rejected, respected and distant general opinion, are reflected. In this context, in the postmodernism axis, the social-cultural, religious and technological changes in the Turkish cuisine have been tried to be revealed from a gastronomic perspective.
