Abstract:

Türk kültüründe önemli bir yere sahip olan Türk yemek kültürü, zengin yapısıyla dünyanın en iyi üçüncü mutfağı olarak değerlendirilmektedir. Orta Asya göçebe hayatıyla başlayan Türk mutfak kültürü, 5. yüzyıldan itibaren gelişme göstermeye başlamış; Selçuklu ve ardından gelen Osmanlı mutfağıyla birlikte en üst seviyesine ulaşmıştır. Türk kültürünün yayıldığı geniş coğrafik alan yemek kültürünün zenginleşmesinin arka planını oluşturmuştur. Bu çalışmada; Türk mutfak kültürünün yapısı, Orta Asya yemek kültürü, Selçuklu dönemi ve Osmanlı dönemi saray mutfağı ele alınmıştır. Türk mutfak kültürü üzerine yazılan kaynaklardan elde edilen bilgiler ışığında ayrıntılı bir literatür çalışması gerçekleştirilmiştir
