Abstract:

Yemek, kültürün içinde özellikli bir konuma sahiptir. Bir dili konuşan milletin sözvarlığında yaşayan yemek adları o dili konuşan insanların hayat tarzını, gelenek ve göreneklerini, inanış şekillerini, toplum yapısını, sosyal ve siyasal oluşumlarını, çevre kültürlerle etkileşimlerini ortaya koyması bakımından dikkat çeken bir özelliktedir. Memluk-Kıpçak Türkçesi sözlüklerindeki yemek adları incelendiğinde dönemin Türk kültürünü yansıtan zengin yapısı ortaya çıkmaktadır. Orta Asya bozkır kültüründe hayatî bir öneme sahip olan et ve süt ürünlerinin saklanması ve kurutulmasına dayalı işlemlerin Mısır-Suriye coğrafyasında yaşadığına tanık oluyoruz. Bu çalışmada Memluk-Kıpçak Türkçesi sözlük ve gramer kitaplarındaki kurutulmuş ve özel koşullarda saklanan yiyeceklerle ilgili sözvarlığı, tarihî-karşılaştırmalı yöntemle tarihî ve modern Kıpçak dilleri alanında incelenmiş, sözvarlığının içerik ve köken bakımından değerlendirilmesi yapılmıştır.

Abstract:

Food has a specific position within the culture. The food names living in the vocabulary of a language speaking nation are a characteristic that draws attention to the way of life, traditions and habits of those speaking people, their forms of beliefs, their social and political formations, their interactions with the surrounding cultures. When the food names in the Memluk-Kıpçak Turkish dictionaries are studied, the rich structure that reflects the Turkish culture of the time appears. We are witnessing that the processes based on the storage and drying of meat and dairy products, which are vital in the cattle culture of Central Asia, live in the Egyptian-Syrian geography. In this study, the vocabulary in the Memluk-Kıpçak Turkish dictionaries and grammar books, which are dry and stored in special conditions, has been studied in the field of historical and modern Kıpçak languages by a historic-comparative method, the vocabulary has been evaluated in terms of content and origin.

Food names that live in the vocabulary of a nation speaking a language are remarkable in terms of revealing the lifestyle, traditions and customs, beliefs, social structure, social and political formations of the people who speak that language and their interaction with the surrounding cultures. When examining the names of food in the Memluk-Kipchak Turkish dictionaries, a rich structure reflecting the Turkish culture of the period is occurred. We witness that the processes of storage and drying of meat and dairy products, which have a vital importance in the steppe culture of Central Asia, live in Egypt-Syria geography. In this study, the vocabulary related to dried and stored foods under special conditions in the Memluk-Kipchak Turkish dictionary and grammar books was examined in the field of historical and modern Kipchak languages by historical-comparative method and its vocabulary was evaluated its vocabulary in terms of content and origin.
