Abstract:

İslam dininde önemli unsurlardan olan helal ve haram terimleri gıda tüketimini etkilemektedir. Helal gıdaya olan ilgi ve talep her geçen gün artmakta ve yeni bir pazar halini almaktadır. Helal gıda tüketme isteği temiz ve sağlıklı yiyecek içeceklerle doğrudan ilişkilidir. Dinine bağlı Müslümanların tatil anlayışları ve hizmet beklentileri dinen belirlenen kurallara göre biçimlenmektedir. Helal turizm anlayışının yürütülmesi için bu kapsamda ilk olarak yapılması gerekenler helâl gıdaları ve İslami kurallara uygun olarak hazırlanmış ürünlerin tüketim ortamının sağlanmasıdır. Müslümanlar için helâl ve haram gıdaların tespitinin yapılması ve toplumun ve işletmelerin bilinçlendirilmesi gerekmektedir. Turizm alanında hizmet veren işletmelerin kendilerini helal konseptli otel olarak tanımlayabilmeleri için gıda, eğlence hizmetlerini ve otel ortamını İslami koşullara göre şekillendirmesi gerekmektedir. Çalışmada gastronomi alanına ilgi duyan Müslüman turistler için önem teşkil eden helal gıda ve helal mutfak kavramlarının Türkiye’deki durumu araştırılmıştır. Bu kapsamda helal turizm anlayışına göre hizmet verdiğini belirten 63 otel değerlendirmeye alınmıştır. Otel bilgileri rezervasyon sitelerinden olan helalinn.com, halalbooking.com ve otellerin web sitelerinin belirlediği kıstaslar ve bu kıstasların işletme bazında değerlendirildiği bir tablo oluşturulmuştur. Helal konseptli otellerin helal gıda ve helal mutfak kriterlere uygunluğu incelenmiş bu alanda yapılan çalışmaların yetersiz olduğu görülmüştür. İşletmelerin %95’inde helal gıda ürünleri sunulduğu belirtilirken sadece %38’i helal mutfak sertifikasına sahiptir. Bu durumu belgelendiren işletme oranı ise %4’tür. İşletmeler Dünya Helal Birliği’nden sertifikalı olduklarını belirtmektedir.

In the Islamic religion, halal and haram terms affect the consumption of food. The interest and demand for halal food is increasing every day and becomes a new market. The desire to consume halal food is directly related to clean and healthy food drinks. The religious Muslims' holidays and service expectations are formed according to the rules determined by the religion. The first thing to do in this context is to ensure the consumption environment of the foods and the products prepared in accordance with the Islamic rules. It is necessary for the Muslims to identify the halal and haram foods and to inform the community and. Businesses in the tourism sector need to shape food, entertainment and hotel environment according to Islamic conditions in order to define themselves as a hotel with a lawful concept. Abstract Halal and haram terms, which are important elements in Islamic religion, affect food consumption. The interest and demand for halal food is increasing day by day and it is becoming a new market. The desire to consume halal food is directly related to clean and healthy food and beverages. The Muslims' religion-dependent holiday perspectives and service expectations are shaped according to the determined rules. In order to carry out the Halal tourism concept, the first things to be done in this context are; is the provision of the environment of consumption of products prepared in accordance with Islamic rules and laws. For Muslims, it is necessary to make the determination of halal and forbidden food and to raise the awareness of the society and. In this study, the situation of the halal food and halal tourism concepts in Turkey were investigated. Within this scope, 63 hotels, which indicate that they serve according to halal tourism concept, have been evaluated. A list of the hotel's booking sites, helalinn.com, halalbooking.com and the websites of their hotels, and a table where these criteria were evaluated on an enterprise basis were created. The suitability of halal-concepted hotels to halal food and halal culinary criteria has been examined and it has been seen that the work done in this area is inadequate. It is stated that 95% of are provided with halal food products, whereas only 38% have halal culinary certificates. The rate of business that documented this situation is 4%. The state that they are certified by the World Halal Union.
