Çalışmada Adapazarı Islama Köftesi ve Kızılcık Şırası; kültürel değerler ve coğrafi işaret tescili açısından analiz edilmiştir. Adapazarı’ndaki yiyecek ve içecek işletmeleri arasından seçilen en eski beş ıslama köfte işletmesi ve uzun yıllardan beri bu işletmelerin müşterileri olan ve yaşları 62-82 olan bireylerle amaçsal örneklem yöntemiyle Islama Köfte ve Kızılcık Şırası ile ilgili mülakatlar yapılmıştır. Yapılan çalışmanın sonucunda ıslama köftenin Adapazarı ile özdeş bir ürün olduğu, Islama Köfte’nin geleneksel yapılış özelliklerini önemli ölçüde koruduğu ve şehir dışından ciddi gastro turist çektiği tespit edilmiştir. Öte yandan Islama Köftenin yanında sunulan Kızılcık Şırası’nın artık menülerinde bulunmadığı ve unutulmaya yüz tutmuş somut olmayan kültürel miras olduğu anlaşılmıştır. Özellikle boza ya da şalgam gibi içeceklerin probiyotik özellikleri ön plana çıkarken kızılcık şırasının bu özelliğinden yeterince yararlanılmadığı sonucuna varılmıştır. Kızılcık Şırası’nın probiyotik içecekler listesinde daha görünür kılınmasının gerekliliği ortaya çıkan önemli bulgulardan biridir.
In the study, Adapazari Islamic Booth and Red Hat were analyzed from the point of view of cultural values and the registration of geographical signs. The oldest of the food and beverage enterprises in Adapazari has been selected and the oldest of the five hydration buffets enterprises and the long-term interviews have been conducted with individuals who have been the customers of these enterprises and who are aged 62-82 with the aim of the sample method of Islamic buffets and Red Bulls. The result of the study was found that the moisturizer is a product identical to the Adapazari, the Islamic Köfte significantly preserved the traditional construction characteristics and attracted serious gastro tourists from outside the city. On the other hand, it is clear that the Red Hat presented next to the Islamic Boulevard is no longer in its menus and is a non-substantial cultural heritage that has been left forgotten.
