Relation Of Consumption Of In Natura, Processed and Ultraprocessed Foods With Gender, Age and Anthropometric Data

It is observed the increasing increase in the consumption of processed, ultraprocessed and overweight foods in the population, for this reason the objective was to identify the relationship of food consumption according to the degree of processing, with gender, age and anthropometric data of adults and the elderly in a nutrition clinic in the interior of Rio Grande do Sul. This is a cross-sectional quantitative study with 178 individuals. Data on weight, height, waist circumference (CA) and neck circumference (CP) were used. To verify the food consumption, a 24-hour food recall was considered and the total caloric value and macronutrients were calculated using the DietWin Plus Nutrition Software version 2013. The average consumption of fresh, processed and ultraprocessed foods was 51, 9%, 19.6% and 28.4%, respectively. At increased CA and CP, overweight and obesity were verified in 87.6%, 84.3%, 15.7% and 64% of subjects, respectively. It was observed that the higher the individual's weight, the higher the percentage of lipids from processed foods (p = 0.007). Men presented significantly higher intakes of total calories (p = 0.001) from processed foods, and lipids (p = 0.022) from ultraprocessed foods. Other studies have shown an increase in the consumption of processed, ultraprocessed and overweight foods, which could result in health and quality of life of people. It was concluded that the majority of the individuals presented overweight and cardiovascular risk, the consumption of processed foods was related to increased CP, and individuals with overweight were related to higher consumption of lipids from processed foods.
