This research, it is aimed to investigate the culinary cultures of the Turks who immigrated from Bulgaria and live in Sakarya from past to present. In this context, the change in Bulgarian immigrant cuisine over time, the recipes that make up the Bulgarian immigrant cuisine, and the interaction between Bulgarian immigrant cuisine and Sakarya cuisine were examined. A qualitative data collection method was used in the research, and the data were obtained from 13 Bulgarian immigrants living in Sakarya with a semi-structured interview form. From the data obtained, 42 names of dishes belonging to the immigrant cuisine were reached, and the recipes of 32 of these dishes were determined. Among the determined dishes, there are also ritually consumed dishes prepared in ceremonial celebrations. In the research, it was concluded that there was a change in the immigrant cuisine compared to the past. It has been determined that the change in the immigrant culinary culture is experienced in the tools and equipment used in cooking in general. During the interviews with the participants, the fact that some participants told about the events during the migration added an important dimension to the research. According to what is told, the difficulties experienced during and after the migration were reflected in their kitchens, and the effect it left continues to exist today.
