Methods of estimating the size of risk premium atenterprises of food industry have been researched. Methodical approach to determining risk premium for using ІВ at enterprises of food industry has been suggested as well as the use of resources, liabilities and profitability indicators at public joint-stock company “Vilnanskiy creamery” in 2006-І half-year in 2011 and analysis of the structure of purchases of products public joint-stock company “Vilnanskiy creamery” out for 2010-2011 has been carried.
