Abstract:

In today’s challenging competitive environment, focus on quality and control activities to maintain their assets. The statistical process control, which is one of the quality control techniques, plays an important role in bringing production and service processes to the desired level with the help of measurable data. In this study, the production lines were studied using statistical process control schemes for 10 or even 300 grams of unpacked normal bread products that could be produced in three factories of an industrial bread manufacturer. After each cooking process, the sample was taken and the grammar of the cooked product was measured. It is inspected by the quality control schemes that the lines are under control within themselves. Variance analysis (ANOVA) has also been applied because there is a statistically meaningful relationship between factories and lines. In the processes outside control, the cause of the errors has been investigated and the measures to be taken have been determined.
