   Хлеб занимает одно  из основопологающих мест в питании турецкого общества . Начиная с  периода Центральной Азии до наших дней,  при расширении територий  в Период Княжеств  и Сельчука, в Османский период и в Период становления  Республики   хлеб  был одним из незаменимых  элементов  турецкой кулинарной культуры . Говоря о питательной ценности хлеба  в традиционной турецкой кухне  важное место уделяется  как составу  так и  способу приготовления  обуславливающими различия  в разнообразии видов хлеба.  Изменения  условий и стиля жизни человека , привычкек  питания  повлияли и на культуру кухни. Инновации, облегчающие большую часть времени жизни человека, стали причиной  медленного исчезновения некоторых способов приготовления пищи, инструментов, оборудования и блюд приговленных с их помощью, которые имелись в прошлом турецкой кухни.       Цель этой работы,  сделать предложения  по использованию в Турции, особенно в Черноморском районе, расппространённом  в прошлом,  в настоящее время редко применяемом  способе приготовления  пищи с  помощью «пилеки». Предложить методы приготовления пищи  на «пилеки» для привлечение  к нему внимания  в наши дни.  В основе работы лежит обзор литературы с использованием вторичных источников и информация, полученная в ходе личных интервью с двумя мастерами пилеки. Результаты исследования показали, что  способ приготовлениея с помощью пилеки хлеба медленно исчезает и  следовательно отсутствует необходимость производства «пилеки». По этой причине были предложены новые подходы для использования «пилеки» для возрождения традиционного способа приготовления хлеба.

The basic element of the Turkish food culture is bread; it was also one of the indispensable food items of day-to-day culinary culture in the period of Beyliks and Seljuks, in the Ottoman cuisine, and in the beginning of the Republican period. In the Turkish culinary culture, the type of bread varies greatly depending on the ingredients and the baking method as much as the place where it is baked. The change in people's lifestyle and the habitat have an effect on the eating habits and culinary culture of the societies. Innovations, which often make life easier, also cause the gradual disappearance of some cooking methods, tools and utensils. The purpose of this study is to draw attention to the use of the "pile" in today's conditions by using the method of baking with pile which is widely used in the Black Sea region in Turkey in the past. The results of the study show that both the "pine production" and the "pine bread" have gradually disappeared nowadays. For this reason recommendations were made for the sustainability of the traditional baking method and for the survival of the new method with some innovative approaches.
