Bu çalışmada, Eğirdir Göl’ün den yakalanan toplam 160 adet doğal tatlı su ıstakozlarının (Astacus leptodactylus Esch, 1823) vücut kompozisyonu ve yağ asidi profilleri üzerinde boy (4.00-7.00cm; 7.00-10.00cm ve 10.00-15.00cm), eşey ve mevsimin (sonbahar, kış) tek ve birlikte oluşturdukları etkiler faktöriyel düzeyinde araştırılmıştır. Biyokimyasal analiz sonuçları değerlendirildiğinde, ham protein seviyeleri üzerinde mevsim ve eşey/boyun birlikte etkileri olduğu tespit edilmiştir. Ham kül seviyeleri mevsime ve eşeye bağlı olarak, nem ise mevsim/boy etkileşimine bağlı olarak değişmiştir. Ham yağ değerlerinde ise bu üç faktöründe etkisi belirlenmemiştir. Yağ asidi analiz sonuçları değerlendirildiğinde tatlı su istakozunda linoleik asit (C18:2 n6, LNA), linolenik asit (C18:3 n3, ALA), araşidonik asit (C20:4 n6, ARA), eikosapentaenoik asit (C20:5 n3, EPA) ve dokosahekzaenoik asit (C22:6 n3, DHA) çoklu doymamış yağ asitlerinde (PUFA) baskın olarak tespit edilen gruplardır. LNA ve MUFA seviyeleri üzerine üç faktörün birlikte etkileri önemli bulunmuşken, ALA, ARA, EPA, DHA, PUFA ve HUFA seviyelerinde ikili interaksiyonlar önemli bulunmuştur. Sonuç olarak, vücut ve yağ kompozisyonu açısından değerlendirilmiş besinsel kalite sonuçlarına göre, tatlı su istakozunun önemli bir protein ve ω-3 yağ asidi kaynağı olduğu ve elde edilen verilerin kerevit yetiştiriciliği için önemli bir veri kaynağı oluşturduğu söylenebilir.
In this study, a total of 160 natural freshwater stagnants captured from Lake Eğirdir (Astacus leptodactylus Esch, 1823) were studied on the body composition and fatty acid profiles size (4.00-7.00cm; 7.00-10.00cm and 10.00-15.00cm), the effects of the matter and the season (summer, winter) created together and together. When the results of the biochemical analysis were evaluated, it was found that the levels of raw protein had combined effects on the seasonal and the object/color. The levels of raw ashes varied depending on the season and the object, while the moisture varied depending on the season/boy interaction. The effects of these three factors have not been determined in raw oil values. When the results of the oil acid analysis are evaluated, in the sweet water stagnation, linoleic acid (C18:2 n6, LNA), linoleic acid (C18:3 n3, ALA), researchonic acid (C20:4 n6, ARA), eikosapentaenoic acid (C20:5 n3, EPA) and dokosahekzaenoic acid (C22:6 n3, DHA) are the groups that are detected as prevalent in multi-insaturated fatty acids (PUFA). The combined effects of three factors on the levels of LNA and MUFA were significant, while bilateral interactions on the levels of ALA, ARA, EPA, DHA, PUFA and HUFA were significant. As a result, according to the nutritional quality results assessed in terms of body and fat composition, it can be said that fresh water stack is an important source of protein and ω-3 fatty acids, and that the obtained data is an important source of data for grain cultivation.
