Amaç: Bu çalışmanın amacı, döner kebap restoranlarında servis edilen bazı çiğ sebzelerin (havuç, marul ve maydanoz vb.) mikrobiyolojik güvenliğini belirlemektir. Ayrıca bu ürünlerin dekontaminasyonunda yaygın olarak kullanılan üzüm sirkesinin antibakteriyel aktivitesi de değerlendirilmiştir. Yöntem: Örnek olarak, İstanbul’da dönerle servis edilen 30 adet garnitür aseptik şartlarda, rastgele seçilmiş 30 restorandan alınmış ve toplam mezofilik aerob bakteri sayısı, Enterobacteriaceae spp. sayısı, Escherichia coli, Salmonella spp. ve Staphylococcus aureus mikrobiyal kalite göstergesi olarak araştırılmıştır. İkinci aşamada, üç farklı sirke örneğinin, garnitürlerden izole edilen bazı Gram negatif bakteriler ve Staphylococcus aureus suşları üzerine antimikrobiyal etkisi minimum inhibe edici konsantrasyon ile incelenmiştir. Bulgular: Toplam aerobik mezofilik bakteri 1.5×104-5.6×107 cfu/g [4.17-7.24 log10; Enterobacteriaceae spp. <10-1.2×107 cfu/g (<1-7.07 log10), koagulaz pozitif Staphylococcus <10-3.4×102 cfu/g (<1-2.53 log10), Escherichia coli sayısı ise <10-2×101 cfu/g (<1-1.30 log10)] miktarında bulunmuştur. İncelenen örneklerin %20’sinde toplam aerobik koloni sayısının ≥107, %60’ında Enterobacteriaceae spp. sayısının ≥104, koagulaz pozitif Staphylococcus sayısının %50’sinde ≥102 cfu/g düzeyinde belirlenmesi ve bir örnekte de Salmonella spp. saptanmış olması yetersiz mikrobiyolojik kaliteyi ortaya koymuştur. Garnitürlerden Klebsiella pneumoniae, Klebsiella ozaenae, Klebsiella oxytoca, Escherichia coli, Enterebacter aerogenes, Escherichia hermanii, Enterobacter cloacae, Hafnia alvei, Aeromonas hydrophila, Citrobacter freundii, Burkholderia pseudomallei, Serratia odorifera biogp 1 ve Staphylococcus aureus identifiye edilmiştir. Üzüm sirkelerinin %1.5-6.25 arasında değişen konsantrasyonlarda incelenen mikroorganizmalara antimikrobiyal etkinliği olduğu saptanmıştır. Sonuç: İncelenen garnitür örneklerinin gıda güvenliği ve halk sağlığı açısından risk oluşturabileceği sonucuna varılmıştır ve bu sonuçlar restoranlarda ısıl işlem uygulanmamış taze gıdalarda iyi hijyen uygulamalarına duyulan gereksinimi göstermektedir.
Purpose: The purpose of this study is to serve some raw vegetables served in the returning kebap restaurants (cannabis, marul and peanut butter, etc.) Determine the microbiological safety. The antibacterial activity of wheat syrup which is widely used in the decontamination of these products has also been assessed. Method: For example, 30 pieces of garnitures served in Istanbul in aseptic conditions, taken from randomly selected 30 restaurants and the total number of mesophilic aerobic bacteria, Enterobacteriaceae spp. The number, Escherichia coli, Salmonella spp. Staphylococcus aureus is a microbial quality indicator. In the second stage, the antimicrobial effect on some Gram-negative bacteria isolated from the garnitures of three different samples of circus and Staphylococcus aureus juices was studied at a minimum inhibiting concentration. Results: Total aerobic mesophilic bacteria 1.5×104-5.6×107 cfu/g [4.17-7.24 log10; Enterobacteriaceae spp. <10-1.2×107 cfu/g (<1-7.07 log10), coagulase positive Staphylococcus <10-3.4×102 cfu/g (<1-2.53 log10), and the Escherichia coli number <10-2×101 cfu/g (<1-1.30 log10). In 20% of the examined samples, the total number of aerobic colonies was ≥107, in 60% Enterobacteriaceae spp. The number is determined at ≥104, in 50% of the number of coagulase positive Staphylococcus at ≥102 cfu/g, and in one example Salmonella spp. It has demonstrated insufficient microbiological quality. Garnitures have been identified as Klebsiella pneumoniae, Klebsiella ozaenae, Klebsiella oxytoca, Escherichia coli, Enterebacter aerogenes, Escherichia hermanii, Enterobacter cloacae, Hafnia alvei, Aeromonas hydrophila, Citrobacter freundii, Burkholderia pseudomallei, Serratia odorifera biogp 1 and Staphylococcus aureus. Vegetable circles have an antimicrobial effect on the microorganisms studied in concentrations ranging from 1.5-6.25%. Result: The examined clothing samples have found that they could pose a risk for food safety and public health, and these findings show the need for good hygiene practices in non-heated fresh foods in restaurants.
