Mikrodalga Kurutma ve Ozmotik Dehidrasyon ile Birlikte Kurutulan Limon Halkalarının Renk Analizi

Bu çalışmada, ozmotik ön kurutma işlemi uygulanmış ve uygulanmamış olan limon dilimlerinin mikrodalga yöntemi ile kurutulmasında ozmotik ön işleminin, mikrodalga kurutma süresi ve mikrodalga güç seviyesi gibi faktörlerin nem kaybı, büzülme oranı ve renk parametreleri üzerine etkileri belirlenmiştir. Renk parametreleri olarak kroma, kahverengileşme indeksi, hue açısı ve toplam renk değişimi seçilmiştir. Bu çalışmada, ozmotik ön kurutma işlemi uygulanmış ve uygulanmamış 10 mm dilim kalınlığındaki limon halkaları mikrodalga fırında kurutulmuştur. Ozmotik dehidrasyon işlemi için katı/çözelti oranı 1/10, sodyum klorür çözelti derişimi %20 (a:h) ve ozmotik dehidrasyon süresi üç saat olarak belirlenmiştir. Mikrodalga güç seviyeleri 100, 200 ve 300 W ve mikrodalga kurutma süresi 2, 4, 6 ve 8 dk olarak seçilmiştir. Elde edilen sonuçlara göre, mikrodalga kurutma işleminden önce uygulanan ozmotik ön kurutma işlemi ile nem kaybı artarken, büzülme oranından önemli bir değişimin olmadığı belirlenmiştir. Ayrıca ozmotik ön kurutma işleminin mikrodalga kurutmada üründeki renk kaybını engelleyerek renk parametrelerinden kroma değeri ve hue açısına olumlu katkısı olduğu görülmüştür.

Color Analysis Of Co-dried Lemon Rings By Microwave Drying and Osmotic Dehydration

Abstract:

In this study, it was determined the effects of microwave drying time and microwave power level, osmotic pretreatment on moisture loss, shrinkage rate and color parameters on microwave drying of lemon slices that was applied both treated and untreated with osmotic pre-dried method. Chroma, brownish index, hue angle and total color change were chosen as the color parameters. In this study, both treated and untreated with osmotic pre-dried method the lemon rings in 10 mm slice thickness were dried in a microwave oven. For the osmotic dehydration process, the solid/solution ratio was 1/10, the sodium chloride solution concentration was 20% (w:v), and the osmotic dehydration time was three hours. Microwave power levels were chosen as 100, 200 and 300 W and microwave drying time were as chosen 2, 4, 6 and 8 min. According to the results obtained it was determined that while the moisture loss increased with the osmotic dehydration pre-drying process applied before the microwave drying process, the diametrical shrinkage ratio wasn’t significantly change. In addition, it has been observed that osmotic dehydration pre-drying process has a positive contribution to color parameters such as chroma value and hue angle by preventing color loss in microwave drying.
