Bu çalışmada Erzurum ili merkezi ve bazı ilçelerinde üretilen inek sütleri ve süt ürünlerinin dönemsel olarak mineral madde içeriği ve ağır metal kirlilik düzeyleri ve bu değerlerin bölgenin toprak ve bitki yapısından ne düzeyde etkilendiği ortaya konulmuştur. Alınan 335 adet inek sütü, 82 adet süt ürünü, 26 adet toprak ve 26 adet çayır-mera bitkisinde Ca, Na, K, Mg, Cu, Fe, Zn, Pb, Ni ve Mn konsantrasyonları, İndüktif Eşleşmiş Plazma Optik Emisyon Spektroskopisi (ICP-OES) cihazı kullanılarak belirlenmiştir. İncelenen inek sütü örneklerinde Ca miktarı 1258.48±350.76 mg/kg, Na miktarı 415.51±167.17 mg/kg, K miktarı 1768.58±461.64 mg/kg, Mg miktarı 107.33±31.19 mg/kg, Cu miktarı 0.079±0.103 mg/kg, Fe miktarı 0.64±3.45 mg/kg, Zn miktarı 1.406±0.751 mg/kg, Pb miktarı 0.031±0.048 mg/kg, Ni miktarı 0.034±0.273 mg/kg ve Mn miktarı 0.022±0.11 mg/kg düzeylerinde bulunmuştur. Erzurum ve yöresinde üretilen inek sütlerinde ulusal ve uluslararası değerlerle karşılaştırıldığında ağır metal açısından ileri düzeyde bir kirlilik olmadığı saptanmıştır. Bölge toprağında herhangi bir ağır metalle ileri düzeylerde kirlilik olmadığı belirlenmiştir. Süt örneklerinin dönemlere göre (yaz-kış) yapılan istatistiksel değerlendirmede Ca, Na, K, Cu ve Pb konsantrasyonlarında faklılık (P<0.01) olduğu saptanmıştır.
This study has shown how periodically the mineral content and heavy metal pollution levels of beef milk and dairy products produced in the Erzurum center and some districts and how much these values are affected by the soil and plant structure of the region. In the received 335 cows milk, 82 milk products, 26 soil and 26 cows-mera plants, the concentrations of Ca, Na, K, Mg, Cu, Fe, Zn, Pb, Ni and Mn were determined using the Inductive Combined Plasma Optical Emission Spectroscopy (ICP-OES) device. The quantity of Ca is 1258.48±350.76 mg/kg, the quantity of Na is 415.51±167.17 mg/kg, the quantity of K is 1768.58±461.64 mg/kg, the quantity of Mg is 107.33±31.19 mg/kg, the quantity of Cu is 0.079±0.103 mg/kg, the quantity of Fe is 0.64±3.45 mg/kg, the quantity of Zn is 1.406±0.751 mg/kg, the quantity of Pb is 0.031±0. 048 mg/kg, Ni is 0.034±0.273 mg/kg and Mn is 0.022±0.11 mg/kg. It has been found that cow’s milk produced in Erzurum and in the area has no advanced level of pollution in terms of heavy metals compared to national and international values. There is no heavy metal contamination in the ground in the region. The statistical assessment of milk samples based on periods (winter-winter) found that the concentrations of Ca, Na, K, Cu and Pb were fatigue (P<0.01).
