Günümüzde besinler ve sağlıkla ilgili yapılan yeni araştırmalar sonucunda doğru olduğu düşünülen bazı bilgilerin eksik yahut yanlış olduğu anlaşılmıştır. İnsan beslenmesinde özellikle lezzet bakımından tercih edilen buğday ve çavdar gibi ekmek çeşitlerinin gluten içermesi Türk mutfağında önemli yer tutan hamur işlerinde kullanılabilecek glutensiz un arayışını başlatmıştır. Çoğu kişinin adını ilk defa duyduğu karabuğday, sorgum, kinoa unu gibi ürünler bu arayış sonucunda ortaya çıkmıştır. Ayrıca bu durum bir seçenek olarak yulafın önünü açmıştır. Yulafın lezzet ve kıvam bakımından diğer glutensiz unlara nispetle buğday ununa en yakın un olduğu söylenebilir. Bugün için özellikle glutensiz olma özelliğiyle böyle bir öneme sahip olan yulafın Osmanlı Devleti’ndeki yeri neydi? Bu makalede Osmanlı Devleti’nde yulaf üretimi ve yulaf üretiminin önemi konusu ele alınmaktadır. Osmanlı Devleti’nde zaman zaman yulaf ihracatı yasaklandığı gibi devletin pek çok alanda takip etmeye çalıştığı millilik anlayışı doğrultusunda dışarıya bağımlı olmamak için yulaf ithal edilmemesi kararı da alınmıştır. Ayrıca yulaf üretiminin artırılması için numune tarlaları oluşturulmuştur. Çalışmada, Osmanlı’da yulafla ilgili atılan bu adımlardaki amacın ne olduğu sorusuna yanıt aranmaktadır. Yulaf yalnızca insan beslenmesi için mi mühimdi, yoksa başka bir öneme sahip miydi?
Nowadays, new research on food and health has found that some information that is considered true is missing or misleading. In human nutrition, especially in terms of taste, the gluten content of bread varieties such as grain and cabbage has begun the search for gluten-free butter that can be used in the bread works that have an important place in the Turkish cuisine. Most people first heard the name of products such as carrot, questionum, kinoa one appeared in this search result. Also, this situation has opened the front as an option. In terms of flavour and weakness, it can be said that it is the nearest butter to the other gluten-free butter relative to the grape butter. What was the place of the yulaf in the Ottoman State, which has such an importance, especially for today, with the characteristic of being glutenless? This article discusses the importance of yulaf production and yulaf production in the Ottoman State. The Ottoman State has also decided that it is not imported to be dependent on the outside in accordance with the nationality that the state tries to follow in many areas as it is prohibited from exporting yulaf from time to time. Also, sampling fields were created to increase the production of yellow. In the study, the answer to the question is what the purpose of these steps in the Ottoman is. Was Yulaf important only for human nutrition, or had it another importance?
