Yenilebilir çiçekler mutfaklarda yaratıcı tabaklar oluşturmaya ve sağlıklı yaşama katkıları dolayısıyla yükselen bir eğilim olarak gündemdedir. Bu nedenle araştırmada, yenilebilir çiçeklerin gastronomi alanındaki önemi konusunda mutfak şeflerinin bakış açılarını belirlemek, en çok tüketilen yenilebilir çiçeklerin hangileri olduğunu ve konaklama işletmelerinde kullanılma durumlarını tespit etmek amaçlanmıştır. Ayrıca yenilebilir çiçeklerin temin edilmesinde yaşanılan güçlüklerin belirlenmesi alt amaçlar arasındadır. Araştırmada nitel araştırma yöntemlerinden görüşme tekniği kullanılmıştır. Veriler, İstanbul, Antalya, Adana ve Mersin illerindeki beş yıldızlı otellerde çalışan aşçıbaşılardan kolay ulaşılabilir durum örneklemesi ve kartopu örnekleme yöntemleri ile toplanmıştır. Bu kapsamda araştırma örneklemini, 2021 yılı Kasım ve Aralık ayları içerisinde yüz yüze, telefon ile ve çevrimiçi olarak görüşülen 22 mutfak şefi oluşturmaktadır. Şeflerin yenilebilir çiçeklere ilişkin olumlu, olumsuz ve geliştirmeye yönelik olmak üzere üç farklı bakış açısı belirlenmiş, en yüksek katılımı olumlu bakış açısı almıştır. En çok kullanılan yenilebilir çiçeklerden ilk beşi; hercai menekşe, kabak çiçeği, narenciye çiçekleri, Latin çiçeği ve lavantadır. Konaklama işletmelerinin %77’3’ünde yenilebilir çiçekler kullanılmaktadır.
Edible flowers are on the agenda as a rising trend due to their contribution to generating creative dishes in kitchens and healthy living. For this reason, it is aimed to determine the perspectives of kitchen chefs on the importance of edible flowers in gastronomy which edible flowers are the most consumed and their use in hospitality businesses. In addition, determining the difficulties experienced in the supply of edible flowers is among the sub-objectives. The research used the interview technique, one of the qualitative research methods. The data was collected from chefs working in five-star hotels in Istanbul, Antalya, Adana and Mersin by convenience sampling and snowball sampling methods. In this context, the research sample consists of 22 kitchen chefs who were interviewed face-to-face, on the phone and online in November and December 2021. Three different perspectives of the chefs regarding edible flowers were determined as positive, negative and development-oriented, and the highest participation received a positive perspective. The first five of the most commonly used edible flowers; viola, cucurbita, citrus blossoms, tropaeolum majus, and lavender. Edible flowers are used in 77.3% of hospitality businesses.
