Abstract:

Bioactive peptites are defined as specific decomposition products of proteins that have positive effects on body functions and health. Milk proteins are considered an important source of bioactive peptites. From dairy proteins, bioactive peptites can be revealed through enzymatic hydrolysis through digestive enzymes, proteolithic activity starter cultures through fermentation and enzymes with proteolysis. These peptides, which are revealed from the main protein molecule in dairy products, can serve as a hormone-like regulatory component in the body and can show many different biological activities in the body, such as antihypertensive, antioxidant, opioid, antimicrobial and immune regulation, depending on the size and content of amino acids. Antihypertensive peptites, also known as angiotensin conversion enzyme (ACE, angiotensin conversion enzyme) inhibitors peptites are the most subject to study. Milk-based peptide fractions have a binding and oxidative stress-preventive effect on free radicals, and can also prevent some chronic heart disorders such as vascular hardening and vascular blocks. In this collection, the formation and functional properties of bioactive peptides in dairy products are assessed.
