Kültür yıllar içerisinde toplumun alışkanlıkları, tercihleri, yaşanmışlıklarıyla şekillenir. Mutfak kültürü ayrıca önemlidir. Göçler, iki farklı toplumun sentezine imkan sağlar. Çoğu zaman da göçle gelen mutfak kültürü, yerleşilen yerin mutfağına dahil olarak zenginleşmesine neden olur. Araştırmanın amacı; 1923 nüfus mübadelesi ile birlikte 1800’lü yılların sonlarında Girit’ten gelen mübadillerin yerleştikleri yerlere mutfak kültürünü ne ölçüde taşıdığını tespit etmektir. Araştırmada amaçsal örneklem yöntemi ile katılımcılar tespit edilmiştir. Nitel araştırma, kartopu ve zincir örnekleme kullanılmış, 14 katılımcı ile görüşmeler yapılmıştır. Görüşmelerden elde edilen verileri doğrulayabilmek için doküman analizi ile kaynak çeşitleme (triangulation) yapılmıştır. Yapılan betimsel ve içerik analizi sonrasında Girit’ten gelenlerin %75’inin mutfak kültürünü devam ettirdikleri tespit edilmiştir. Analizler sonrasında Girit mutfağının genel özellikleri belirlenmiş, yerleşilen yere sağladığı değişimler ve buna neden olan durumlar ile ilgili tespitler yapılmıştır. Unutulmasının engellenmesine, kültür turizmi içerisinde de kullanımına yönelik öneriler sunulmuştur. Bu makale, birinci yazar tarafından Aydın Adnan Menderes Üniversitesi Sosyal Bilimler Enstitüsü, Turizm İşletmeciliği Doktora Programı’nda Gastronomi ve Mutfak Sanatları konusunda tamamlanmış olan, Ulusal Tez Merkezi 773236 no’lu "Girit mutfağının Türk mutfak kültüründeki yeri ve sürdürülebilirliği" adlı doktora tezinden hazırlanmıştır.
Culture is formed over the years by society’s habits, preferences, experiences. The culture of the kitchen is important. Immigration allows the synthesis of two different societies. Most of the time, the immigrant cuisine culture causes the settlement to be enriched, including the kitchen. The purpose of the study is to identify how much mutants from Grit at the end of the 1800s, along with the 1923 population exchange, brought the kitchen culture to the places where they settled. The researchers were identified with the aim of the sample method. Qualitative research, cartridge and chain sampling were used, 14 participants were interviewed. Triangulation (triangulation) is done to verify the data obtained from the discussions. Following the imaging and content analysis, it was found that 75% of those coming from Girit continued their kitchen culture. After the analyses, the general characteristics of the Girit kitchen were determined, the changes it provided to the location and the circumstances that caused it were identified. It has been recommended to prevent its forgotten use in cultural tourism.
