Abstract:

Abstract Local foods are among the most intriguing elements in gastronomic tourism. In this study, it is aimed to determine the local foods of Yenipazar district of Bilecik province and to make them written. In the first stage of the research, all neighborhoods and villages of Yenipazar were visited and a compilation study was carried out in the field. At this stage, the interview and observation technique, one of the qualitative research methods, was used. Content analysis was used in the analysis of the obtained data. In the second stage of the study, 29 of these prescriptions were selected and applied. As a result of the application, the recipes of these foods, which were tried, were revealed. As a result of the study, local foods belonging to the Yenipazar food culture were determined on the basis of the village, the differences between the villages were revealed and the determined recipes were reported in writing. In addition to contributing to gastronomic tourism, it is thought that the study will also contribute to the authentic menus that can be created specific to the villages in the gastronomic tour routes to be realized in the region.
