Bu çalışmada kahve, kahvehaneler ve caféler tüketim, tüketim sosyolojisi ve küreselleşme/küreyerelleşme tartışmaları ekseninde, orta ölçekli bir kent olan Eskişehir özelinde Starbucks örneğinde kuramsal olarak tartışılmaktadır. Kahve üretim, tüketim ve bölüşüm ilişkilerine sahip önemli bir tüketim maddesidir. Kahve ve kahvehane Doğu kültürü ile özdeşleştirilmiş, kahvehaneler Osmanlı’dan günümüze insanları bir araya getiren sohbet ile bezenmiş bir toplumsallaşma pratiği ve mekânı olarak işlev görmüştür. Batı’da ise Doğu’dan alınan kahve ve café kültürü Aydınlanma ve modernleşme süreci ile birlikte kamusal mekânlara dönüşmüştür. Orta ölçekli bir kent olan Eskişehir son on yılda kentsel dönüşümle birlikte orta sınıfın çoğaldığı, “küreselleşen” ve “Avrupalılaşan” bir kent görünümündedir. Eskişehir’de kahve tüketimi son dönemde hızla farklılaşan dinamiklere sahiptir. Kahvehanelerde ve kafelerde tüketilen Türk kahvesinin yerini, yerel ve küresel zincirlerde değişik kahve çeşitleri almış ve kahve tüketiminin kendisi mutenalaşmıştır. Bu mekânlarda kahve tüketmek sınıfsal olarak ayrışmanın temel gösterenlerinden biri haline gelmiştir. Yerel kahve zinciri Kahve Dünyası ve küresel kahve zinciri Starbucks bu anlamda değişen, küreselleşen Eskişehir’de kahve tüketimi bağlamında, yerel-küresel diyalektiğini görebilmek açısından önemli gözlem alanları oluşturmaktadır. anahtar kelimeler: kahve, tüketim, küreselleşme, küreyerelleşme, Starbucks, Kahve Dünyası
In this study, coffee, coffee shops and cafes are theoretically discussed in the example of Starbucks, a medium-scale city in Eskişehir, in the axis of consumption, consumption sociology and globalization/culturalization discussions. Coffee is an important consumption substance that has a relationship between production, consumption and distribution. Coffee and coffee have been identified with the Eastern culture, coffee shops have served as a socialization practice and place embedded with the conversation that brings people together from the Ottoman to today. In the West, the culture of coffee and coffee from the East, along with the process of Enlightenment and modernization, has become public spaces. Eskişehir, a middle-scale city, is in the appearance of a "globalized" and "European" city where the middle class has multiplied along with the urban transformation in the last decade. Coffee consumption in Eskişehir has rapidly varied dynamics in recent periods. The place of Turkish coffee consumed in the cafés and cafés, the various varieties of coffee in local and global chains, and the consumption of coffee itself has changed. Coffee in these places has become one of the main indicators of class separation. The local coffee chain Coffee World and the global coffee chain Starbucks are important observations in the context of coffee consumption in this sense changing, globalized Eskişehir, to see the local-global dialogue.
