Türk mutfağı kendine özgü özelliklere sahip olması sebebiyle, diğer uluslararası mutfaklarla kıyaslandığında büyük öneme sahiptir. Karadeniz mutfağı ise Türk mutfak kültüründe ön plana çıkan ve değerlerini koruyarak güzümüze aktaran yöresel mutfaklar arasında gösterilmektedir. Araştırma bu kapsamda Bursa ilinde faaliyet gösteren 5 yıldızlı şehir oteli aşçılarının Karadeniz mutfağı üzerine bilgilerini ve uygulama düzeylerini ölçmeyi amaçlamaktadır. 2020 Şubat ve Mart ayları arasında gerçekleştirilen araştırmada anket veri toplama yöntemi kullanılmış bu kapsamda 10 şehir oteline ulaşılarak 148 anket formları dağıtılmıştır. Örneklemin tamamına ulaşılmaya çalışılan araştırmada analizlere dâhil edilebilir n=138 form toplanabilmiştir. Verilerin çözümlenmesinde tanımlayıcı istatistik ve frekans analizi testi ile hipotezler için Mann Whitney U, Kruskal Wallis testleri kullanılarak değerlendirme yapılmış, anlamlı farklılığı saptamak içinse Tukey ve Tamhane testi kullanılmıştır. Araştırma sonucunda, Bursa ilinde bulunan 5 yıldızlı otel aşçılarının Karadeniz mutfağına ilişkin görüşlerinin önemli ölçüde olumlu olduğu görülmekte fakat aşçıların Karadeniz yöresine has tatları duymaması ve tatmaması olumsuz bir durum olarak değerlendirilmektedir. Aşçılar tarafından en çok bilinen yiyeceklerinse genel olarak literatürde önemli derecede bilinilir olarak aktarılan yiyeceklerle benzerlik gösterdiği saptanmıştır.
Because the Turkish cuisine has its own peculiarities, it is of great importance when compared to other international cuisine. The Black Sea cuisine is shown among the local cuisine that stands in the forefront of the Turkish cuisine culture and preserves its values to our beauty. The research aims to measure the knowledge and level of application of the 5-star city hotel chefs operating in the province of Bursa on the Black Sea cuisine. In the survey conducted between February and March 2020, the survey data collection method was used in this framework to reach 10 city hotels and 148 survey forms were distributed. The study was able to collect the form n=138 which could be included in the analysis. In the analysis of data identifiable statistics and frequency analysis tests and hypotheses were evaluated using Mann Whitney U, Kruskal Wallis tests, and to determine meaningful differences were used Tukey and Tamhane tests. According to the research, the opinions of 5-star hotel chefs in the province of Bursa on the Black Sea cuisine are significantly positive, but it is considered negative that the chefs do not hear and do not taste special tastes in the Black Sea area. It is found that the foods most well-known by chefs are similar to the foods that are widely known in literature.
