Safranbolu’da Gastronomi Turizminin Geliştirilmesine Yönelik Bir Araştırma

Abstract:

Gastronomi turizminde Türk mutfağının ve yöresel mutfakların pazarlanmasında bölgede faaliyet gösteren restoranlar, yiyecek içecek işletmeleri ve turistik sosyal tesisler büyük rol oynamaktadır. Bu işletmelerde sunulan yerel ve yöresel yiyecek-içecekler, bunların çeşitliliği, kültürel yapısı, mevsimlere göre gösterdikleri değişiklikler, sunum şekli, kalitesi vb. faktörler turistlerin ve müşterilerin yöresel lezzetler hakkında bilgi ve deneyim sahibi olması ve beğenilerinin kazanımı bakımından büyük önem arz etmektedir. Bu çalışmada, Safranbolu destinasyonunda gastronomi turizminin geliştirilmesine yönelik bir araştırma yapılmıştır. Araştırma da yöresel yiyecek-içecek işletmeleri sahipleri ve/veya yöneticilerinin, yine bu işletmelerde ya da halk eğitim kurslarında çalışan aşçı ve aşçı yardımcılarının, Turizm Tanıtma ve Danışma Bürosu, Kültür ve Sosyal İşler Müdürlüğünde ki memurların, Turizm Fakültesi’nde ki akademisyenlerin yer aldığı toplam 15 kişi ile yüz yüze görüşme yapılmış ve konu ile ilgili çeşitli sorular ile fikirleri alınmıştır. Bu fikirlerden de yola çıkarak Safranbolu’da gastronomi turizminin geliştirilmesine yönelik olarak çözüm önerileri geliştirilmiştir.

Abstract:

In the gastronomic tourism, restaurants, food and beverage and tourist social facilities that operate in the region in the marketing of Turkish cuisine and local cuisine play a major role. Local and local food and beverages offered in these enterprises, their diversity, cultural structure, changes they show according to seasons, the form of presentation, quality, etc. Factors are of great importance for tourists and customers to have knowledge and experience about local tastes and to gain their likes. In this study, a research was conducted towards the development of gastronomic tourism in the destination of Safranbolu. The research was also faced-to-face with the local food and beverage enterprises owners and/or managers, the cook and cook assistants working in these enterprises or public training courses, the Tourism Promotion and Consulting Bureau, the Directorate of Culture and Social Affairs, the Tourism Faculty, the academics who participated in a total of 15 people, and the ideas were taken with various questions related to the subject. From these ideas, solutions for the development of gastronomial tourism in Safranbolu have been developed.

Local and local food and beverages offered in these establishments, their variety, cultural structure, changes in seasons, presentation style, quality, etc. The factors are of great importance for tourists and customers to have knowledge and experience about local delicacies and to gain appreciation. In this study, a study was conducted to develop gastronomy tourism in Safranbolu destination. The survey also found that the total number of local food and beverage business owners and / or managers, as well as the number of cook and chef assistants working in these businesses or public education courses, the officials in the Tourism Promotion and Consultation Bureau, the officials in the Culture and Social Affairs Department, Face to face interviews were made with 15 people and various questions and ideas about the subject were taken. Based on these ideas, solutions for the development of gastronomy tourism in Safranbolu have been developed.
