Çalışmada mikrodalga kurutma yönteminin dereotu yapraklarının kuruma kinetiğine ve renk kriterlerine olan etkisi araştırılmıştır. Kurutma sırasında nem değişimi modellenerek en iyi tahmin eden matematiksel model belirlenmiştir. Kurutma işlemi mikrodalganın 360 W ve 540 W güçleri için 30, 40 ve 50 saniye çalıştırılarak ve 120 saniye bekletilerek gerçekleştirilmiştir. 360 W güçte yapılan kurutma işlemlerinin kuruma süreleri sırasıyla 20,5 dk, 13 dk, 11 dk sürerken, 540 W güçte yapılan kurutma işlemleri ise 8 dk, 7 dk, 6,5 dk sürmüştür. Kurutulan dereotu yapraklarının kroma ve toplam renk farklılığı değerleri açısından taze ürünün özelliklerini en iyi muhafaza eden yöntemin 360 W güçte 50 saniye çalıştırılarak yapılan kurutma yöntemi olduğu belirlenmiştir. 360 W güçte 30 saniye bekletilerek yapılan kurutma yöntemi ise kroma ve toplam renk farklılığı açısından taze ürünün özelliklerini en az muhafaza eden yöntem olarak belirlenmiştir. Nem değişimlerinin tahmin edilmesinde Page, Midilli - Küçük, Modified Page ve Logaritmik gibi dört farklı matematiksel model kullanılmıştır. Her iki güç kademesinde de kuruma eğrilerini en iyi tahmin eden modelin Midilli - Küçük olduğu belirlenmiştir. Her iki güç kademesinde 50 saniyelik kurutma yöntemi için ise Page ve Midilli - Küçük modelleri kuruma eğrilerini en iyi tahmin eden modeller olarak belirlenmiştir.
In the study, the effect of the microwave drying method on the drying kinetics and color criteria of the drainage leaves has been studied. The most predictive mathematical model is determined by modeling the moisture change during drying. The drying process was carried out by running for 30, 40 and 50 seconds for the power of 360 W and 540 W of the microwave and waiting for 120 seconds. The drying time of 360 W power processes lasted 20,5 min, 13 min, 11 min, and 540 W power processes lasted 8 min, 7 min, 6.5 min, respectively. The method that best preserves the characteristics of the fresh product in terms of the chromic and total color difference values of the dried drill leaves is determined as the drying method performed by running for 50 seconds at 360 W power. The drying method with a power of 360 W for 30 seconds is defined as the method that minimally preserves the characteristics of the fresh product in terms of chromium and total color differences. For the prediction of moisture changes, four different mathematical models have been used, such as Page, Midly-Little, Modified Page and Logarithmic. In both power stages, the model that best predicts the moisture curves has been determined to be Midilli - Small. For the 50 seconds drying method in both power stages, the Page and Midilli - Small models are defined as the models that best predict the drying curves.
