Bu araştırma Mardin ilinde üretilen pilavlık ve köftelik bulgurların kimyasal özelliklerinin Türk standartlarına uygunluğunu araştırmak amacıyla yapılmıştır. Veriler 2014 yılının Temmuz ayında Mardin ili Çağdaş Bulgur fabrikasından elde edilmiştir. Verilerin analiz sonuçları SSPS paket programı kullanılarak istatistikî kontrole tabi tutulmuştur. Buğday örnekleri için Türk Standartları referans değer olarak alınmış ve standart değerlerle karşılaştırmada Tek örnek t testi analizi uygulanmıştır. Yaptığımız araştırmada Mardin piyasasında temin edilen pilavlık ve köftelik bulgurların kimyasal özelliklerinin Türk Standartlarına uygun oldukları belirlenmiştir. Pilavlık bulgurda bulunan rutubetin Türk standartları değeri en çok %13 iken araştırmada %12,05 olarak bulunmuştur (p< 001). Külün Türk standartları değeri en çok %2,0 iken araştırmada %1,33 bulunmuştur (p< 001). Protein değerinin Türk standartları değeri en az %11 iken, araştırmada %12, 32 olarak bulunmuştur (p< 001). Köftelik bulgurda rutubetin Türk standartları değeri en çok %13 iken, araştırmada %11,74 olarak bulunmuştur (p< 001). Külün Türk standartları değeri en çok %2,0 iken araştırmada %1,27 bulunmuştur (p< 001). Protein değerinin Türk standartları değeri en az %11 iken araştırmada %11,28 olarak bulunmuştur (p< 001). Araştırmada Temmuz ayına ait pilavlık ve köftelik bulgurların rutubet, protein, kül değerlerinin Türk Standartlarına uygun oldukları belirlenmiştir.
This study was conducted with the aim of investigating the chemical properties of rice and bulgur produced in the province of Mardin in accordance with the Turkish standards. The data was obtained in July 2014 from the Mardin or Contemporary Bulgur factory. Data analysis results are subject to statistical control using the SSPS package program. For grain samples, the Turkish Standards were taken as reference values and one sample t test analysis was applied in comparison with the standard values. The research we have done in the Mardin market has determined that the chemical properties of rice and bulgur supplied in the Mardin market are in accordance with the Turkish Standards. The Turkish standard value of rubin found in rice bulgur was up to 13%, while the study found that it was up to 12.05% (p< 001). The value of the Turkish standard for coal was at a maximum of 2,0%, while the study found 1.33% (p< 001). The Turkish standard value of protein was at least 11%, while the study found it at 12% and 32% (p< 001). The Turkish standard value of rubbets in the bulgur was 13%, while the study found that the value of rubbets in the bulgur was 11.74% (p< 001). The value of the Turkish standard for coal was at a maximum of 2,0%, while the study found 1.27% (p< 001). The Turkish standard value of protein was at least 11%, while the study found that it was 11.28% (p< 001). The study found that the rubber, protein, and dirt values of rice and bulgur in July were in accordance with the Turkish standards.
