Laktik asit bakterileri (LAB) uzun yıllardır gıda üretimlerinde starter ya da koruyucu kültür olarak kullanılan güvenilir bakterilerdir. Bu bakteriler, bakteriyosinleri de içeren çeşitli antimikrobiyel bileşikler üretirler. Bakteriyosinler, özellikle de LAB tarafından üretilenler gıda proseslerinde koruyucu olarak kullanılma potansiyeli olan doğal bileşikler olmaları nedeniyle dikkat çeken antimikrobiyel bileşiklerdir. Bu çalışmada çeşitli çiğ süt ve peynirden izole edilen 63 adet LAB’nin antimikrobiyel aktiviteleri belirlenmiştir. Antimikrobiyel aktivite denemeleri sonucuna göre agar spot testinde inhibitör etkiye sahip olan izolatların 6 adedinin L. monocytogenes’e karşı, 7 adedinin S. aureus’a karşı, 25 adedinin ise her ikisine karşı inhibitör etkiye sahip olduğu, kuyucuk difüzyon denemesi sonucunda ise 7 adet suşun Listeria monocytogenes üzerinde antimikrobiyel etkiye sahip olduğu anlaşılmıştır. Çalışmada diğerlerine oranla daha yüksek aktiviteli antimikrobiyel madde (1600 AU/mL) ürettiği saptanan 26 numaralı izolat, API 50CHL (Biomerieux, Fransa) ile biyokimyasal tanımlama sonucunda Lactococcus lactis ssp. lactis 1 olarak tanımlanmıştır.
Lactic acid bacteria (LABs) are reliable bacteria that have been used for many years as a starter or protective culture in food production. These bacteria produce a variety of antimicrobial compounds that also contain bacteriosins. Bacteriosins, especially those produced by LAB, are notable anti-microbial compounds because they are natural compounds with the potential to be used as protective in food processes. This study identified the antimicrobial activities of 63 LABs isolated from various raw milk and cheese. According to the results of antimicrobial activity trials in the agar spot test, 6 units of insulates with inhibitor effect against L. monocytogenes, 7 units of S. It was found that 25 of them had an inhibitor effect against aureus and 25 against both, while 7 of them had an an antimicrobial effect on Listeria monocytogenes. The study found that it produced a higher-activity antimicrobial substance (1600 AU/mL) as a result of biochemical identification with API 50CHL (Biomerieux, France) and Lactococcus lactis ssp. It is defined as lactis 1.
