Et ürünleri, içeriğindeki hayvansal proteinlerin yanı sıra, demir ve B12 gibi hayati vitamin ve mineral içerikleriyle sağlıklı beslenme açısından önemli gıda türlerindendir. Ancak, yetersiz arz, yüksek fiyat ve güvenilirlik gibi sorunlar nedeniyle her gelir grubundan insanın et ürünlerini yeterli düzeyde tüketmesi mümkün olmamaktadır. Öte yandan hayvansal proteinlerin tüketiminin sağlık üzerindeki etkisine dair çatışmalı bulgular ve kültürel, demografik farklılıklar da bireylerin et tüketim tercihleri üzerinde etkili olmaktadır. Bu çalışma, temelde et tüketimine dair hanehalkı tercihlerinin, gelir gibi ekonomik faktörlerin yanı sıra çeşitli demografik faktörlerle ilişkisini, TÜİK tarafından yürütülen Hanehalkı Bütçe Anketi mikro veri setine dayanarak incelemeyi amaçlamaktadır. Çalışmada, hayvansal proteinler kırmızı et, beyaz et ve deniz ürünleri olmak üzere üç grupta ele alınmakta ve bu ürünlere dair tüketim kalıplarının hanelerin gelir düzeyi, tüketim harcamaları ve fertlerin demografik özellikleri ile ilişkisi ANOVA ve Tukey testleri aracılığıyla araştırılmıştır. Sonuç olarak, kırmızı et ve deniz ürünleri tüketimlerinin gelir, harcama gibi ekonomik faktörlerin yanı sıra eğitim düzeyi ve meslek gibi demografik faktörlerden yüksek oranda etkilendiği, kümes hayvanları etlerinin tüketimlerinin ise nispeten daha ucuz ve ulaşılabilir olmaları sebebiyle bu değişkenlerden fazla etkilenmediği anlaşılmıştır.
Meat products, in addition to animal proteins in them, are important foods for healthy nutrition with vital vitamins and minerals such as iron and B12. However, due to problems such as insufficient supply, high prices and reliability, it is not possible for people from every income group to consume sufficient meat products. On the other hand, conflicting findings about the health effects of animal protein consumption and cultural and demographic differences also influence individuals’ meat consumption preferences. This study aims to study the relationship of household preferences on meat consumption, economic factors such as income, as well as various demographic factors, based on the micro-data set of household budget survey carried out by TIK. The study examined animal proteins in three groups, including red meat, white meat and seafood, and the relationship of consumption patterns to households' income, consumption spending and demographic characteristics of foods was studied through ANOVA and Tukey tests. As a result, it was understood that the consumption of red meat and seafood was highly influenced by economic factors such as income, expenditure, as well as demographic factors such as education and profession, and that the consumption of cattle meat was not much influenced by these variables because they were relatively cheaper and accessible.
