Hatay ili yoğun tarımsal ve sanayi (demir- çelik vb.) faaliyetleri nedeniyle ağır metal kontaminasyonu açısından dikkat edilmesi gereken önemli bölgelerden birisidir. Bu çalışmanın amacı Hatay ilinden toplanan bazı yöresel peynirlerin metal konsantrasyonlarının belirlenmesi ve halk sağlığı üzerine etkileri açısından değerlendirilmesidir. Bu kapsamda Hatay ilinin farklı noktalarından Carra (n:11), Künefelik (n:11), Sünme (n:11) ve Sürk (n:11) peynir numuneleri toplandı. Numunelerdeki organik bileşiklerin uzaklaştırılması için mikrodalga yaş yakma metodu kullanıldı. Yakma işlemi sonrası As, Cd, Cr, Cu, Fe, Hg, Mn, Ni, Pb ve Zn metal düzeyleri ICP-OES cihazı kullanılarak ölçüldü. Elde edilen veriler analiz edildiğinde peynir numunelerinde canlılar için esansiyel olmayan As, Cd, Cr, Hg, Ni ve Pb ağır metallerine rastlanmamıştır. Peynir grupları arasında Cu düzeyleri açısından fark anlamlı değildi. Carra, Künefelik ve Sünme peynirle kıyaslandığında Sürk peynirlerinin Fe ve Mn konsantrasyonları anlamlı düzeyde (P<0.001) daha yüksek, Zn konsantrasyonları ise anlamlı düzeyde daha düşük bulundu (P<0.01). Carra, Künefelik ve Sünme peynirlerinde tespit edilen ortalama Zn düzeylerinin literatürle kıyaslandığında yüksek olduğu tespit edildi. Sonuç olarak Hatay bölgesinde satışa sunulan Carra, Künefelik, Sünme ve Sürk peynirlerinin tespit edilen ortalama metal düzeyleri göz önüne alındığında tüketilmelerinin sağlık riski taşımadığı söylenebilir.

The aim of this study is to determine the metal concentrations of some local cheese collected from the Hatay province and to evaluate its effects on public health. In this scope from the different points of the Hatay province were collected cheese samples from Carra (n:11), Künefelik (n:11), Sünme (n:11) and Sürk (n:11). Microwave age burning method was used to remove organic compounds in samples. After the burning process, the As, Cd, Cr, Cu, Fe, Hg, Mn, Ni, Pb and Zn metal levels were measured using the ICP-OES device. When the data were analyzed, no heavy metals as, Cd, Cr, Hg, Ni and Pb were found in cheese samples that were not essential for animals. The difference between the cheese groups was not significant in terms of the Cu levels. In comparison with Carra, Cunefelic and Sünme cheese, the Fe and Mn concentrations of Sürk cheese were significantly higher (P<0.001) and the Zn concentrations were significantly lower (P<0.01). The average Zn levels identified in Carra, Künefelik and Sünme cheese were high when compared to literature. As a result, the Carra, Künefelik, Sünme and Sürk cheese offered for sale in the Hatay region can be said that their consumption, taking into account the average metal levels identified, does not carry any health risks.
