Optimization of Drying Process of Mushroom Powder Production from Pleurotus ostreatus using Response Surface Methodology

Ülkemizde kavak, kayın ve istiridye mantarı olarak bilinen Pleurotus ostreatus, Agaricus bisporus’dan (şapkalı mantar) sonra üretimi yapılan ikinci mantar türüdür. Taze ve işlenmiş mantarlar ürünleri dünya çapında tat ve lezzetleri bakımından büyük ilgi görmektedir. Dünyada üretilen yemeklik mantarın %40-50’si taze olarak tüketilmektedir. Ancak hasat edilen mantar yüksek nem ve enzim içeriği nedeniyle ancak ortalama bir hafta depolanabilmekte ve depolama sürecinde hızla kalite kaybı görülmektedir. Yapılan bu çalışmada diğer çalışmalardan farklı olarak mantarın kurutulmasının yanında gıda işleme prosesine uygun olarak toz haline getirilmesinin optimize edilmesi amaçlanmıştır. Yapılan optimizasyon sonucunda 50 °C’de 269.02 dk. yapılan kurutma işleminin en uygun kurutma normu olduğu sonucuna varılmıştır. Bu sıcaklık ve süre normlarında bulunan EC50 değeri, Toplam Fenolik Madde Miktarı ve istenebilirlik oranı sırası ile; 275.464, 0.762 ve 0.976 olarak belirlenmiştir.

Abstract:

Pleurotus ostreatus is the second type of fungi produced after Agaricus bisporus (chapcal fungi). Fresh and processed fungi products are very interested in their flavours and flavours worldwide. 40% to 50% of the food fungi produced in the world is consumed fresh. However, the harvested fungi can only be stored for an average week due to its high moisture and enzyme content, and the rapid loss of quality is observed during the storage process. In this study, unlike other studies, it is intended to optimize the drying of the fungi in accordance with the process of food processing. The optimization resulted at 50 °C at 269.02 min. The result is that the drying process is the best drying standard. The EC50 value found in these temperature and time standards is determined by the total phenolic substance quantity and desirability ratio in order; 275.464, 0.762 and 0.976.
