Bu çalışmada, farklı kızılötesi kurutma sıcaklıkları ile kurutulan hurma örneklerinin kuruma süresi, kuruma hızı ve mevcut bazı kurutma modellerinin uygulanabilirliği incelenmiştir. Çalışmada laboratuvar tipi kızılötesi kurutucu kullanılmış olup hurma örnekleri 5 mm kalınlığında dilim olarak kurutulmuştur. Deneysel sonuçlar, 60, 70 ve 80 °C kızılötesi kurutma sıcaklık uygulamalarının sırasıyla 310, 170 ve 110 dakika sürdüğünü göstermiştir. Hurma örneklerinin kurutma kinetiklerinin tanımlanması için, Henderson ve Pabis, Newton, Page, Logaritmik, İki Terimli, İki Terimli Eksponansiyel, Wang ve Singh, Difüzyon Yaklaşımı, Midilli ve ark. ince tabaka matematiksel kurutma modelleri kullanılarak en uygun model araştırılmıştır. İstatistiksel parametreler esas alınarak bu modellerin performansları değerlendirildiğinde, en düşük ki-kare (χ2) ve hataların karelerinin karekök ortalaması (RMSE) değerlerinin yanı sıra en yüksek belirtme katsayısı (R2) değerlerine sahip Midilli ve ark. modeli hurma örneklerinin tüm kurutma davranışlarının tanımlanması için en iyi model olarak bulunmuştur.
This study examined the duration of drying, drying speed, and the applicability of some of the existing drying models of dried amounts with different infrared drying temperatures. In the study, the laboratory-type infrared dryer was used, and steam samples were dried as a piece of a thickness of 5 mm. Experimental results showed that the application of an infrared drying temperature of 60, 70 and 80 °C lasted 310, 170 and 110 minutes, respectively. For the identification of the drying kinetics of shapes, Henderson and Pabis, Newton, Page, Logarithmic, Two-Terms, Two-Terms Exponential, Wang and Singh, Diffusion Approach, Midilli and Ark. The most suitable model is studied using the thin layer mathematical drying models. When the performance of these models is assessed on the basis of statistical parameters, the lowest quarters (χ2) and the quarters of errors (RMSE) with the lowest quarters (R2) and the highest indication rate (R2) with the lowest quarters (χ2) and the lowest quarters (RMSE). The model has been found as the best model for the identification of all drying behaviors of the hurma samples.
