Abstract:

Bu araştırma, kaz etinin bazı kimyasal ve mikrobiyolojik kalite nileliklerini belirlemek amacıyla yapılmıştır. Araştırmada 9 adet dişi ve 9 adet erkek kaz kullanılmıştır. Kaz karkaslarında ortalama rutubet, protein, yağ ve kül içenği, sırasıyla % 61.54. % 27.21, "-'o 10.60 ve % 0.65 olarak bulunmuştur. Kaz karkaslannın toplam mezofilik aerobik mikroorganizma sayısı 7 8x103 kob/cm2. psikrofilik mikroorganizma sayısı 5.9x102 kob/cm2 tespit edilmiş. Salmonella. Staphylococcus-Micrococcus baktenlerı ile M aya-küf üremesi olmamıştır.

Abstract:

This research was done with the aim of determining certain chemical and microbiological quality values of grape meat. In the study, nine female and nine male grapes were used. The average intake of rubber, protein, oil and ashes in the rubber is 61.54% respectively. 27.21, "- it was 10.60 and 0.65%. The total number of mesophilic aerobic microorganisms in the cortex is 7 8x103 kob/cm2. The number of psychrophilic microorganisms 5.9x102 kob/cm2 was detected. and Salmonella. There is no Staphylococcus-Micrococcus bacteria.
