Afyonkarahisar’da Satışa Sunulan Afyon Kaymaklarının Mikrobiyolojik Özellikleri

Bu çalışmada, Afyonkarahisar ili genelinde aile ve küçük çapta üretim yapan işletmelerin ürettiği (n: 35) ve endüstriyel olarak üretilerek satışa sunulmuş (n: 35) Afyon kaymağı örneklerinin mikrobiyolojik kalitelerinin belirlenmesi amaçlanmıştır. Aile ve küçük çapta üretim yapan işletmelerin numunelerinde, TAMB, TAPB, toplam koliform, maya-küf, laktik asit bakteri, Pseudomonas spp. ve Staphylococcus aureus sayıları sırasıyla ve ortalama, 6.36, 5.92, 4.64, 6.24, 5.79, 5.44 ve 4.24 log kob/g aile ve küçük çapta üretim yapan işletmelerin ürettiği numunelerde ortalama belirlenmiştir. Buna karşın mandıra ve süt fabrikalarında üretilen kaymak numunelerinde ise; 5.02, 4.76, 2.54, 4.28, 4.54, 2.98 ve 2.24 log kob/g olduğu tespit edilmiştir. Aile ve küçük çapta üretim yapan işletmelerin ürettiği kaymaklardan alınan numunelerin, 11 adedinde Escherichia coli, 2 adedinde Escherichia coli O157:H7, 8 adedinde Salmonella spp., 7 adedinde Listeria spp., 4 adedinde Listeria monocyogenes ve 2 adedinde Clostridium perfingens üremesi belirlenmiştir. Endüstriyel olarak üretim yapan mandıra ve süt fabrikalarında üretilen numunelerde ise; 7 adedinde Escherichia coli, 3 adedinde Salmonella spp., 3 adedinde Listeria spp., 2 adedinde Listeria monocyogenes üremesi gözlenmiştir.

In this study, the aim is to determine the microbiological qualities of the amounts of the Afyon slurry produced by the family and small-scale producing enterprises throughout the Afyonkarahisar region (n: 35) and produced by industry (n: 35) for sale. In the samples of family and small-scale producing enterprises, TAMB, TAPB, total koliform, maya-crow, lactic acid bacteria, Pseudomonas spp. and the numbers of Staphylococcus aureus, respectively and on average, 6.36, 5.92, 4.64, 6.24, 5.79, 5.44 and 4.24 log kob/g family and small-scale manufacturing enterprises produce average samples. However, in the sliding samples produced in mandria and dairy factories, it was found that it was 5.02, 4.76, 2.54, 4.28, 4.54, 2.98 and 2.24 log kob/g. The samples taken from the fluctuations produced by the family and small-scale producing enterprises were identified in 11 Escherichia coli, 2 Escherichia coli O157:H7, 8 Salmonella spp, 7 Listeria spp, 4 Listeria monocyogenes and 2 Clostridium perfingens. In the samples produced in industrially manufactured mandria and dairy factories, there was 7 Escherichia coli, 3 Salmonella spp, 3 Listeria spp, 2 Listeria monocyogenes.
