Türkiye’de gastronomi ve mutfak sanatları programı ilk olarak 2003 yılında açılmıştır. Şu an ise 93 üniversite bünyesinde bulunmaktadır. Bu araştırmada devlet ve vakıf üniversitelerinde bulunan gastronomi ve mutfak sanatları programının bağlı olduğu yüksekokul ve fakültelerin yönetici kadrosundaki akademisyenlerin eğitim programları incelenmiştir. Araştırma sonucunda gastronomi ve mutfak sanatları bölümünün sanat ve tasarım, güzel sanatlar, turizm ve uygulamalı bilimler yüksekokul/fakültelerinde yer aldığı ve bölüm başkan ve başkan yardımcılığı kadrosunda çoğunlukla turizm, gıda mühendisliği ve işletme eğitimi almış yöneticilerin yer aldığı %24,18’lik kısmının doktora eğitimlerinin farklı bölümlerden olduğu görülmüştür. Akademisyenlerin yüksek lisans eğitimlerinde ise bu durum %18,06 iken lisans eğitimlerinde ilk sıralarda gıda mühendisliği, turizm işletmeciliği, turizm işletmeciliği ve otelcilik, konaklama işletmeciliği bölümleri vardır. Farklı bölümlerde lisans eğitimi alan yöneticiler ise %26,04 oranındadır. Bunun sebebinin gastronomi ve mutfak sanatları bölümünün farklı fakülte ve yüksekokullarda bulunması olarak düşünülmektedir.
The Gastronomy and Kitchen Arts Program in Turkey was first opened in 2003. Currently there are 93 universities. This study examined the educational programs of academics in the management staff of higher schools and faculties where the gastronomy and cooking arts program is connected to the state and foundation universities. The study found that the department of gastronomy and cooking arts was attended at the universities/faculities of art and design, beauty arts, tourism and applied sciences and that the department’s chairman and vice chairman were attended by managers who were mostly attended by tourism, food engineering and business education, and that 24.18% of the doctoral training was attended from different departments. In the graduate studies of the academics, this is 18.06%, while in the graduate studies, the first places are food engineering, tourism management, tourism management and hospitality, accommodation management. Managers who receive a bachelor’s degree in different departments are 26.04%. This is due to the existence of the gastronomy and kitchen arts department in different faculties and universities.
