Butik Otellerin Yiyecek ve İçecek Departmanlarına Yönelik E-Şikâyetlerin Analizi: Akyaka Yavaş Şehir (Cittaslow) Örneği

Bu çalışmanın amacı Muğla ilinin Ula ilçesinde yer alan yavaş şehir merkezi Akyaka da faaliyet gösteren butik otel işletmelerindeki yiyecek-içecek departmanına yönelik e-şikâyetlerin incelenmesidir. Tripadvisor sitesinde yer alan butik otellere yönelik paylaşılmış bulunan 254 şikâyet, içerik analizine tabi tutulmuş ve öne çıkan şikâyetler içerik ve betimsel analiz yöntemiyle değerlendirilmiştir. Şikâyetlerini paylaşan tüketicilerin otellere ‘‘ortalama’’ ve ‘‘çok kötü’’ karşısında daha çok ‘‘kötü’’ değer atfettikleri araştırmanın başlıca sonuçlarındandır. Ayrıca şikâyete konu olan hizmetlerin de yer alan kahvaltı kalitesi, fiyat memnuniyetsizliği, yemek kalitesi, servis personeli memnuniyetsizliği ve restoran temizliği olduğu tespit edilmiştir. Bulgular çerçevesinde yavaş şehir merkezlerinde yer alan butik otellerde yiyecek içecek departmanının yetersiz kaldığı noktalar ve eksikliklerinin tespit edilmesi sonucunda kaliteyi arttırma adına yapılması gerekenler ortaya koyulmuştur.

Abstract:

The purpose of this work is to study the e-mails to the food and beverage department of the boutique hotel enterprises that operate in the slow city center of Akyaka, located in the Ula district of Muğla. The 254 complaints shared against boutique hotels on the TripAdvisor site were subject to content analysis and the outstanding complaints were evaluated by content and visual analysis method. Consumers who share their complaints are the main results of the research that they attribute more "bad" value to the "mediate" and "very bad" hotels. The services that are subject to the complaint have also been found to include breakfast quality, price insatisfaction, food quality, service staff insatisfaction and restaurant cleaning. In the framework of the findings, the boutique hotels located slowly in the city centers have revealed what to be done in the name of improving the quality as a result of the detection of the points where the food and beverage department remains insufficient.
