Abstract:

Araştırmada Konya yöresindeki süt işletmelerinde peynir yapımında kullanılan 20 adet hayvansal sıvı peynir mayası, mikrobiyolojik ve kimyasal kalite nitelikleri yönünden incelendi. Numunelerde aerobik mezofilik mikroorganizma ve maya/küf sayılarının sırasıyla 0-1.0x103 kob/g ve 0-9.6x10 kob/g arasında değiştiği, diğer taraftan numunelerin hiç birinde koliform bakterilere, E.coHye, S. aureus1 a ve anaerobik bakterilere rastlanmadığı tespit edildi. Numunelerin tuz ve pH değerleri ise sırasıyla %12.91-18.79 ve 5.02-6.10 arasında bulundu. Sonuç olarak, incelenen numunelerin mikrobiyolojik özellikler açısından TS 3844 peynir mayası standardına uygun olduğu, fakat %10'nun tuz miktarı yönünden TS 3844'e uygun olmadığı tespit edildi.

In the study, 20 pieces of animal liquid cheese used in the production of cheese in the dairy enterprises in the region of Konya were studied in terms of microbiological and chemical quality qualities. The number of aerobic mesophilic microorganisms and mayas varied between 0-1.0x103 kob/g and 0-9.6x10 kob/g respectively in samples; on the other hand, no samples found koliform bacteria, E.coHye, S. aureus1a and anaerobic bacteria. The salt and pH values of the samples were between 12.91-18.79% and 5.02-6.10 respectively. As a result, the examined samples were found to be in accordance with the TS 3844 cheese corn standard in terms of microbiological characteristics, but 10% of the salt quantity was not in accordance with TS 3844.
