Bu çalışmada Erzurum ili Pasinler-Horasan ilçeleri arasından geçen Aras Nehri’nden örnekleme yapılan tatlı su midyelerinin (Unio crassus) mevsimsel yağ asidi kompozisyonun değişimi incelenmiştir. İki ilçe arasındaki 3 farklı istasyondan yılın tüm aylarında çamurdan çıkarıp eleme yöntemi ile örnekleme yapılmıştır. Araştırma bulgularına göre doymuş yağ asitlerinden miristik (14:0), palmitik (16:0), stearik (18:0) ve araşidik (20:0) asitin seviyeleri ilkbahar ve yaz döneminde azalmakta buna karşın sonbahar ve kış döneminde artmaktadır. Doymamış yağ asitlerinden oleik (18:1n-9), linoleik (18:2n-6) ve araşidonik asit (20:4n-6) mevsimlere bağlı olarak birbirlerine paralel değişim gösterirken linolenik asit (18:3n-3) diğer doymamış yağ asitlerinin düşüşüne ve artışının aksine artış ve azalış göstermiştir. EPA (20:5n-3) ve DHA (22:6n-3) oranlarında ise doymuş yağ asitlerinde olduğu gibi sonbahar-kış döneminde artış, ilkbahar-yaz aylarında ise azalış olduğu bulunmuştur. Araştırma sonucunda tatlısu midyelerinin toplam ortalama yağ oranları %1.5 dolaylarında olduğu tespit edilmiştir. Yağ içeriklerinin ise; Araşidonik Asit, EPA ve DHA açısından zengin olduğu belirlenmiş ve insan sağlığı için esansiyel olan bu yağ asitleri yönünden değerli olduğu tespit edildiği için ekonomiye kazandırılması için çalışmalar yapılması gerekmektedir.
In this study, we have studied the change in the composition of the seasonal oil acid of the sweet water stomaches (Unio crassus), which is sampled from the Aras River through the Erzurum or Pasinler-Horasan districts. Three different stations between the two districts have been removed from the dust throughout the year and sampled with the method of removal. Research findings show that the levels of saturated fatty acids (miristic (14:0), palmitic (16:0), stearic (18:0) and researched (20:0) are reduced in the spring and summer period, but increased in the autumn and winter period. From unsmalled fatty acids, oleic (18:1n-9), linoleic (18:2n-6) and researchonic acid (20:4n-6) showed parallel changes depending on the seasons, while linoleic acid (18:3n-3) showed increases and decreases in contrast to the decline and increase of other unsmalled fatty acids. EPA (20:5n-3) and DHA (22:6n-3) have increased in the autumn-winter period, as in saturated fatty acids, and in the spring-winter months have decreased. The study found that the total average fat rate of sweetened stomachs was 1.5%. The fat content is found to be rich in Arashidonic Acid, EPA and DHA, and it is found to be valuable in terms of these fatty acids that are essential for human health.
