Bu çalışmanın amacı, gıda işletmelerinin Covid-19 salgın döneminde uyguladıkları üretim ve pazarlama stratejilerinin üretim performansları üzerine etkisinin ölçülmesidir. Bu amaçla Ordu ilinde gıda sektöründe faaliyet gösteren 126 işletme yöneticisine anket uygulanmıştır. Verilerin analiz edilmesinde faktör analizi, korelasyon analizi ve regresyon analizleri uygulanmıştır. Elde edilen sonuçlara göre üretim stratejilerinin alt boyutlarından hız, maliyet ve esneklik boyutları ile işletme performansı arasında yüksek düzeyde pozitif yönlü kalite boyutu ile işletme performansı arasında ise orta düzeyde pozitif yönlü anlamlı bir ilişki bulunmuştur. Pazarlama stratejilerinin alt boyutlarından fiyat ve dağıtım boyutları ile işletme performansı arasında yüksek düzeyde pozitif yönlü pazarlama araştırması ve tutundurma boyutları ile işletme performansı arasında ise orta düzeyde pozitif yönlü anlamlı bir ilişki tespit edilmiştir. Yapılan basit doğrusal regresyon analizleri sonucunda hem üretim stratejisinin hem de pazarlama stratejisinin işletme performansı üzerinde pozitif etkisi bulunmuştur. Üretim stratejilerinin alt boyutlarından maliyet ve hızın, pazarlama stratejilerinin alt boyutlarından ise dağıtım ve fiyatın işletme performansı üzerinde pozitif yönde anlamlı etkileri olduğu gözlemlenmiştir. Salgın döneminde işletme performansını artırmak isteyen gıda işletmeleri yöneticilerinin özellikle hızlı ürün teslimatına, etkili bir tutundurma çalışmasına ve etkin bir dağıtım sürecine önem vermeleri gerektiği önerilebilir. Ayrıca bu dönemde maliyet belirli bir seviyede tutularak yüksek karlılık elde edilebileceği sonucuna varılabilir
The aim of this study is to determine the effect of the production and marketing strategies of food companies on their production performance during the COVID-19 pandemic. To that end, a questionnaire was administered to 126 business managers operating in the food sector in Ordu. Data were analyzed using factor analysis, correlation analysis, and regression analysis. According to the results, speed, cost, and flexibility (subdimensions of production strategies) were highly and positively correlated with business performance. Quality was moderately and positively correlated with business performance. Price and distribution (subdimensions of marketing strategies) were highly and positively correlated with business performance. Marketing research and promotion were moderately and positively correlated with business performance. According to the results of the simple linear regression analysis, both production and marketing strategies had a positive effect on business performance. Cost and speed (subdimensions of production strategies) and distribution and price (subdimensions of marketing strategies) had significantly positive effects on business performance. Food business managers who want to increase business performance during the epidemic; in particular, it can be suggested that they should give importance to fast product delivery, an effective promotion work and an effective distribution process. In addition, it can be concluded that high profitability can be achieved by keeping the cost at a certain level in this period.
