Enzymes are used to catalyse the desirable reactions in industrial processes. Today, enzyme applications in such processing gets more difficulties because of the rare occurance and high costs. The aim of using the microbial enzymes is to achieve this problem. Such enzymes like proteases, lipases, catalase, lactases and transglutaminase in milk and milk products in production and improving their quality are used as primary microbial origin enzymes. At the same time, the usage of microbial enzymes are important for the development of milk and milk products with new physical and functional properties in world food industry.
