Abstract:

This research was done to determine the hygienic quality of Chinese butterflies offered for sale in the province of Aydin or China, to investigate the suitability of the Turkish Food Code and raw red meat and prepared red meat mixture. For this purpose, 100 Chinese butterflies were microbiologically studied. The study found that the total number of aerobic living in the 100 Chinatown is 2.8 x 104-3.4 x 107 kob/g, the number of mayas and mayas is 9.0 x 102-4.4 x 105 kob/g, the number of staphylococcus-micrococcus is 1.8 x 1031.4 x 106 kob/g, the number of koliform group bacteria is 5.5 x 10-2.1 x 106 kob/g, the number of Staphylococcus aureus is 1.6 x 103-4.3 x 105 kob/g, and the number of Salmonella spp is 18 per cent. was found. As a result, the microbiological quality of Chinese butterflies has not been observed in accordance with the transmission of meat mixture prepared by the Turkish Food Code.
