Amaç: İş yaşamında stresin artması ile çalışanlarda depresyon ve kaygı gibi psikolojik; obezite ve kalp hastalıkları gibi fizyolojik zararlar oluşabilmektedir. Stresin, diyetteki sağlıksız seçimlerle ve iştah üzerindeki etkileriyle sağlık sorunlarına yol açabileceği ileri sürülmektedir. Bu çalışmada, iş stresi ve geriliminin beslenme durumu ve antropometrik ölçümler üzerine etkisinin değerlendirilmesi amaçlanmıştır. Bireyler ve Yöntem: Araştırma, bir devlet üniversitesinde idari personel, temizlik personeli ve aşçı olarak çalışan 20-65 yaş arası 34 kadın ve 150 erkek ile yürütülmüştür. Bireylerin beslenme alışkanlıklarını, iş stres durumlarını belirlemek amacıyla anket formu uygulanmıştır. Bireylerin 24 saatlik besin tüketim kayıtları ile Sağlıklı Yeme İndeksi (SYİ) puanları hesaplanmış; antropometrik ölçümleri alınmıştır. Bulgular: İş gerilimi olmayan ve SYİ puanı kötü düzeyde olanların oranı idari personelde daha düşük bulunmuştur. İş gerilimi olmadığı durumda da aşçıların %76.9’unun, temizlik personelinin %89.5’unun ve idari personelin %67.9’unun bel kalça oranlarının yüksek olduğu ve bu durumun obezite ile ilişkili hastalıklar açısından risk oluşturabileceği belirlenmiştir. İş gerilim durumuna göre temizlik personelinin yağ, posa, B1, B2, C vitamini, niasin, magnezyum ve demir alımları anlamlı bir fark göstermiştir (p<0.05). Temizlik personelinin yağ, posa alımları iş stresi puanı ile anlamlı negatif bir ilişki göstermiştir (p<0.05). İdari personelde ise iş stresi puanı, meyve suyu puanı ve sodyum puanı ile pozitif, sebze puanı, proteinli besin alım puanı ile negatif korelasyon göstermiştir. İdari personelin, iş yükü puanı beden kütle indeksi, bel çevresi ile negatif bir ilişki göstermiştir (p<0.05). Sonuç: İş stresi bireylerin beslenme kalitelerini ve antropometrik ölçümlerini etkileyen bir faktördür. İş yerinde sağlıklı beslenme alışkanlıklarını kazandırmak ve iş stresini azaltmak için stratejilerin geliştirilmesi gereklidir.
Objective: With increased stress in the work life, employees can experience psychological damage such as depression and anxiety; obesity and heart disease. It is said that stress can lead to health problems with unhealthy choices in the diet and its effects on appetite. This study aims to evaluate the effects of work stress and stress on the nutritional status and anthropometric measurements. Individuals and Method: The study was conducted with 34 women and 150 men aged 20-65 and working as administrative staff, cleaning staff and cook at a state university. The survey form was applied to determine the eating habits of individuals, work stress conditions. The 24-hour food consumption records of individuals and the Healthy Eating Index (Healthy Eating Index) scores were calculated; anthropometric measurements were taken. Results: The proportion of those who have no work tensions and who have a poor SII score has been found lower in the administrative staff. If there is no work tension, 76.9 percent of chefs, 89.5 percent of the cleaning staff and 67.9 percent of the administrative staff have high bacterial spine rates and this situation may be a risk for diseases associated with obesity. According to the work stress, the cleaning staff’s oil, pose, B1, B2, vitamin C, niacin, magnesium and iron intake showed a significant difference (p<0.05). The cleaning staff’s oil, pose purchases have shown a significant negative relationship with the work stress score (p<0.05). In the administrative staff, the work stress score, the fruit juice score and the sodium score have shown a negative correlation with the positive, the vegetable score, the protein nutrient intake score. Administrative staff, work load score body mass index, has shown a negative relationship with the back surrounding (p<0.05). Work stress is a factor that affects the nutrition quality and anthropometric measurements of individuals. It is necessary to develop strategies to gain healthy eating habits at work and to reduce work stress.
